Founded in 1987, Pascal Jolivet owns 70 hectares in the Loire, with 45 hectares in Sancerre. Their 'signature Sancerre' is crafted from a blend of 50% limestone, 30% limestone clay, and 20% flint terroirs, each fermented and vinified separately in stainless steel with up to 6 months on fine lees before blending. Limestone adds minerality and finesse, limestone clay boosts fruit and richness, and flint provides structure and minerality. This organic wine features a tightly wound palate with notes of white grapefruit, green apple, fennel, and a fine slick of lees, all underscored by a stony note leading to a lengthy, subtly flinty finish. Classic, pure, and bright, it is enjoyable now and will age well.
