Octomore 13.1 is as youthful and dynamic as its super-heavily peated predecessors. Distilled patiently from the 2015 harvest of 100% Scottish Mainland barley, this single malt is malted to a stratospheric 137.3 PPM and matured in the highest quality American oak casks.

If heavy peat is what dad likes, gift him the Octomore, from the Islay distillery of Bruichladdich. Aged for five years in Bourbon barrels, the hidden peat smoke gives way to the floral, malty spirit and sweet American oak with smoked apricot jam, burnt heather and Turkish delight. As with much of what passes for Japanese whisky, the spirit for this one was not produced in Japan, it was however matured there for at least some of its life. This "pure malt", a term no longer allowed in Scotland, means it is a blend of different single malts, or a Blended Malt. The sourced whiskies, almost certainly Scottish, where matured in ex-Bourbon and ex-Sherry before marrying and gfinishing in Mizunara, Japanese Oak. 43%.

Tasting Notes

Nose: salted caramel, raisins, dates and figs; firm new leather, fruity tobacco and candied nuts; chocolate covered espresso beans and Twizzlers black licorice.

Palate: round, fruity and spicy; more salted caramel, firm new leather, Twizzlers Black and salty Dutch licorice; a trace of juicy malt, dried dark fruits and more chocolate covered espresso; drying and spicy with more cinnamon sticks, ginger root and fennel.

Finish: medium long, coating, drying and spicy; elegant but subtle.

Comment: the Mizunara oak notes do not come through quite as prominently for me on the 15 as they did on the 10 year; this is a more mature, austere and understated malt.

Octomore 13.3 demonstrates the phenomenal force of flavour when combining super-heavy peat with the variable harvests gathered from the island of Islay, raised by friend and farmer James Brown on one singular farm.

Martell XO has a spicy, rich crescendo starting with the mellow elegance of the Borderies, followed by the intensity and finesse typical of Grande Champagne eaux-de-vie. Octomore 13.2 offers an alternative maturation to the structural brilliance delivered by its 13.1 counterpart. In an indulgent point of difference, the five-year-old spirit has spent its entire maturing life in Oloroso butts from Fernando de Castilla, Spain.

D'Ussé XO Cognac, a blend of Cognacs aged between 10 to 30 years in oak, presents a deep copper hue. Its complex nose offers dried apricot, butterscotch, and orange zest. On the palate, flavors of blackberry, dark chocolate, toasted nut, apricot, and honey intertwine, creating a smooth and full-bodied experience. The finish is lengthy, with earthy notes emerging.

Red fruit and allspice aromas lead into a big, punchy palate. Each sip opens rich, with smoked cherry, vanilla bean, dried fig and chocolate-covered caramels. It finishes dry, with cigar wrapper, leather and a hint of clove. To be clear, the effect is dry but never austere: think comfy leather chairs and indulgent cigars. Finished in a variety of sherry casks.

A rare release drawn from the Paradis cellars at the Château de Montifaud, this Cognac was the first to personally be distilled Louis Vallet (4th generation), which today stands as a proud family treasure and trophy of the longstanding legacy each of the family's generations beholds. After aging in a combination of red oak and ancient Cognac barrels, Château de Montifaud Héritage Louis Vallet L50 Cognac the percentage of alcohol naturally reduced to 50%; it was then diluted over a period of 2 years down to 40%. This Grand Cru blend was crafted exclusively from Petite Champagne eaux-de-vie between 1935 and 1982, making it an exceptionally rare Cognac.
Eye: Dark antique amber

Nose: Old cigar boxes appear immediately, followed by nuts and spices. Very round and mellow with good rancio.

Palate: The palate keeps the oak light, bringing forth an almond sweetness. The finish is exceptionally long.

Ace of Spades Champagne, also known as Armand de Brignac, is a brand of champagne produced by the Champagne house Cattier in Chigny-les-Roses, France. The champagne is made from a blend of grapes of the Chardonnay, Pinot Noir, and Pinot Meunier varieties, and is known for its rich, full-bodied flavor and elegant packaging. It has aromas and flavors of citrus, brioche, and toasted nuts, and is often enjoyed as an aperitif or paired with rich, flavorful foods.

There are observable but minor differences between the wines of the different Climats (named plots). In most cases, Meursault is greeny-gold in colour or canary yellow, leaning towards bronze as it ages. Limpid and brilliant, it sometimes exhibits silvery highlights. Its bouquet has strong aromas of ripe grapes. The young wine is redolent of toasted almonds and hazelnuts in a floral (mayflower, elder, bracken, lime, verbena) and mineral (flint) setting. Butter, honey, and citrus fruits are also present. On the palate it is rich and fat with a cheerful and appealing taste of hazelnut. Unctuousness and freshness are in silky balance. Long and structured, it needs time to mature - this is a great white wine for laying down.

Rich and delicate notes of fig, raisin, plum and candied orange are revealed in a multi-layered bouquet. Complex flavours of orange, crème brûlée and sweet spice are complimented by floral notes that flow elegantly through the palate to a smooth and lengthy finish. Thrilling notes of pure crème de cassis, lead pencil shavings, crushed mint, graphite, and crushed rock notes all emerge from this deep, powerful, yet elegant Pauillac. The style of this wine has become more and more finesse-driven and pure, yet it hasn't lost a beat on concentration or length.

This is another property owned by the famous Rothschild family, acquiring this estate in 1970, embarking on an ambitious renovation of the vineyards. Vines were replanted, parcels were consolidated and technical improvements were made including the building of a new vat room. Chateau Clerc Milon is a Fifth Growth located in Pauillac that adjoins both Chateau Mouton and Rothschild. This 2019 is a blend of 72% Cabernet Sauvignon, 22% Merlot, 4% Cabernet Franc and 2% Petit Verdot. Containing the highest amount of cabernet sauvignon since the 1980's, this is classic Pauillac with fresh cassis, red cherry and plum that has nuances of classic, lead pencil, cedar and tobacco. This can be enjoyed now with a decant but has the ability to age very well for the next 20 years.

The palate is soft and seductive, with integrated, ripe tannins subsumed by fleshy black fruit. Oily black cherries with a long, fruit-laden finish, this will be approachable and moreish from the outset. Gorgeous aromas of currants, crushed stones, blackberries and flowers.

Palate: Balanced, refreshing, hints of spice, lingering herbal finish

Bright golden appearance shot through with amber highlights. A delightfully refined Rivesaltes with a classy bouquet of soft caramel, stewed apples, pears, nuts and an overriding impression of completeness. Round and elegant on the palate, with a Margaux like understated sophistication. Unmistakeable rancio characters help to place this in a blind tasting, but this is preceeded by impressions of butterscotch, walnut fudge, soft brown sugar and a little treacle. Very gentle on the long length with a pleasing warmth that lingers long after the wine has disappeared.

The Macallan distillery of Speyside was founded in 1824 by Alexander Reid, a barley farmer. It was one of the first distilleries in Scotland to be legally licensed. Made from the finest barley and matured for 15 years in a combination of Sherry seasoned American and European oak; these casks without a doubt, are the single greatest contributor to the distinctive aromas and flavours, not to mention the outstanding quality of this Scotch. The apple takes centre stage in the 15, showing baked apples with butterscotch, marmalade and notes of toffee on the nose with a warm palate of warm apples with raisins with cinnamon, nutmeg and vanilla. The finish lingers with oak and spice.

Chateau Suduiraut, classed as a Premier Cru in 1855, is made from grapes selected from the finest terroirs of the property. This wine is hand crafted at every stage of its elaboration and reveals remarkable finesse and complexity and a golden colour reminiscent of the sun that made it possible. With age the bright gold evolves to a dark amber colour. With an extensive life-span, it powerfully and harmoniously combines fruit and floral aromas with roasted and candied notes.

Chateau Haut-Bailly (Pessac-Leognan)- Chateau Haut-Bailly always delivers amazing wine, and this vintage is no exception. With aromatic and dense black fruits of cherry and cassis the 66% Cabernet Sauvignon and 34% Merlot is savory and delightful with earthy minerality and tobacco nuances. Be patient and you will be rewarded with a supremely delicious wine. You won't have to wait too long though as 2024 will mark 10 years in the bottle and the wine will start to show well. Drink 2024-2035.

Dusty spices and oak in the relatively dry finish.

The 2018 Cosecha bottling is crafted from over-ripe Highland pinto Blue Weber agave cultivated at an altitude of 5,019 feet in the mineral-rich CALICHE soil of Vista Hermosa, Micohoacán, the southernmost region within the D.O.
