Founded in 1987, Pascal Jolivet owns 70 hectares in the Loire, with 45 hectares in Sancerre. Their 'signature Sancerre' is crafted from a blend of 50% limestone, 30% limestone clay, and 20% flint terroirs, each fermented and vinified separately in stainless steel with up to 6 months on fine lees before blending. Limestone adds minerality and finesse, limestone clay boosts fruit and richness, and flint provides structure and minerality. This organic wine features a tightly wound palate with notes of white grapefruit, green apple, fennel, and a fine slick of lees, all underscored by a stony note leading to a lengthy, subtly flinty finish. Classic, pure, and bright, it is enjoyable now and will age well.

This wine is light in colour, featuring spicy, floral, cherry, and licorice aromas. It opens with a dry, savoury attack with sour cherry, smoky, peppery, and celery salt notes, complemented by soft and round tannins. Catherine and Didier Champalou share a common background, both hailing from vigneron families. However, their shared spirit of independence led them to embark on their winemaking journey alone. In 1983, they founded their Domaine, and since then, their label has earned widespread acclaim in the appellation. Vouvray, the region they call home, is renowned for the noble Chenin Blanc grape, also known as Pineau de la Loire. The Champalou family tends to 21 hectares of vineyards, committed to sustainable farming practices and even incorporating the lunar calendar into their work. Their vineyards boast rich, deep soils, well-aerated due to regular plowing. Embodying the Champalou house style, their wines exude elegance and tenderness, characterized by intense aromas and impeccable balance. Their unique style sets them apart, and no one else comes close to replicating their distinct and exceptional wines.

Critic tasting note: "This blend of Chenin Blanc, Chardonnay and Cabernet Franc is ripe and yeasty. It has perfumed fruit, although the fruit is ensconced in a bitter, nutty character. The acidity is intense, giving freshness at the end."

The domain recently celebrated its 350th anniversary and is reinforced with modern facilities that allow them to diversify the methods of winemaking and enhance this magnificent terroir.

The grapes are placed in temperature-controlled vats for a cold maceration of two to four days, then a controlled fermentation. Patrick Lambert's vineyards are located in Cravant-les-Coteaux, just 8 km from Chinon, renowned for producing some of the finest wines in the Chinon appellation. He cultivates 6.5 hectares of land, all classified as organic. Lambert's red wines reflect the classic Chinon style, showcasing the full fruitiness and deep texture of Cabernet Franc. His marvelous rosé demonstrates a light touch, allowing his wines to develop their own unique character.

On the glass, a pale salmon colour with an amber hue appears. On the nose, hints of flint, chalk and sea minerals are supported by suggestions of blood orange and strawberry. On the palate, notes fresh guava and green apples are brightened by a lively structure and a saline finish. Elegant and utterly refreshing.

This Brut made as a Crémant highlights the typical freshness and fruity aromas of the varietal. Fresh, refreshing and fun. The vineyards lie in one of the sunniest spots resulting in a delicate salmon color with aromas of rose petals, cranberries with a twist of hazelnuts.
