The Flying Dutchman Rum is the first rum made in Europe. It is distilled from a very nice molasses of sugarcane. Two types of yeast, fermented at a low temperature, give it a nice fruity character. The fermentation takes at least two weeks. This is exceptionally long but important for the development for the delicate flavor of this rum. After the long fermentation time, the rum is distilled three times in small handmade red copper stills. After the distillation process, the rum is filled into barrels and aged for a minimum of 36 months in former Port barrels.

From a vineyard in Coonawarra purchased by the Hill-Smiths in 1992, on terra rossa soils, the majority of the vineyard was planted in 1975. The wine matured for 22 months in barrels, 30% new French oak hogsheads, the remainder in older barrels from France, America and Hungary. Almost black in its saturated colour, fruit straddles blackberry, blueberry and damson plum, with a sheen of polished old wooden furniture, gigar smoke and again a firmness suggested by gravel and graphite. Sumptuously sweet and succulent in the mouth, and enveloping richness and depth of glossy black fruit lies over mocha and sweet smokiness, tannins so sandy and fine and acidity pert like cherry pits. It's big, it's classic, it's a wonderfully expressive wine of grape and place.

In spite of the age of this tiny two-acre plot of vines (planted in 1889), the wine itself is a youthful juice bomb, with a snap, crackle and pop of aromas reminiscent of blueberry basil lemonade or the boozy, cranberry tang of a cosmopolitan. The palate is more tempered flavor-wise, but the light-fresh feel, with a chocolaty chew of tannins, gives an al dente bite that makes for a thirst-quenching style while also being detailed enough to cellar another seven to eight years.

Walsh Whiskey has rarely released better whiskeys than those of 2019, which included two expressions made in collaboration with the Legaret family of Deau Cognac. Here, they apply bourbon and French oak cognac barrels to the unique marriage of single pot still and single malt Irish whiskeys, arguably the most premium interpretation of the Irish blend. Aromas of dark berry fruit, cinnamon, fudge, milk chocolate, graham crackers, jellied fruit, and a smudge of dry spices. Compelling, well-structured whiskey with cinnamon, chocolate, dark toffee, pepper, and ginger; never cloying, nor overly sweet, just a richly rewarding glass. Number 10 in the 2019 Top 20

Deep, dark and elegant, this full-bodied wine sips easily despite significant tannins since they are silky and fine-grained. Black cherries, blackberries and blueberries blend with hints of charred oak and iron for a complex, edgy palate.

Pale greenish yellow, silver glints. Finely dusted herbal savoury nuances, meadow herbs, alluring whiffs of white stone fruit, fine orange zest, and a tobacco touch. Juicy, full-bodied, elegant, refined expression of exotic fruit, sophisticated acidity, lovely creamy texture marked by a saline finish. Excellent length, accessible, with promising ageing potential.

Medium garnet, broad rim with purple hues. Fine herbal-tobacco savouriness, red cherry fruit, a hint of clementine zest; a fresh bouquet. Complex, juicy, elegant, well-integrated acidity, delicate tannins, light-bodied, wild red berry fruit, mineral finish; certainly has further ageing potential.

The palate shows very nice restraint in terms of freshness, mouth watering with crisp young stone fruit flavours, good volume and texture with fine extract and a very long vibrant finish.
