Fuenteseca Tequila presents the mastery of agave cultivation and tequila distillation using agave cultivated in various soil types, distilled in assorted still types, and rested in an array of vessels, be they of stainless steel or a collection of wooden casks from around the world… harmonizing to create incomparable spirits in a series of limited bottlings.

In a bid to craft the world's most extensively aged tequila, Master Distiller Enrique Fonseca utilized copper double-column stills for distillation. Sourced from agaves planted mostly in 1984 and harvested at the end of 1993, the distillation process crossed into the early days of the new year, with the tequila being barreled in February 1994. Initially aged for 10 years in a dry, earthen-floored aging room in Atotonilco el Alto, the casks were then moved to a cooler, higher altitude environment in Chapingo, Jalisco, to mature for an additional 11 years. The tequila was bottled in 2014, with the majority of it aged in 180L Canadian white oak barrels previously used for Canadian rye whiskey, except for one barrel, which had aged California white wine, marking a pioneering effort in tequila production. The nose is moderately spicy, rounded with notes of butterscotch with a taste is of oaky vanilla, but the agave still comes through nicely- leaving a soft, long finish, with hints of coconut.

In 2006, Don Julio, with his family, planted their final agave field. In honor of his devotion and craftsmanship, this agave harvest was carefully distilled, barreled, and set aside for a special use. To preserve this tequila and the exquisite agave piñas behind it, we have implemented a Solera aging system. The Solera aging method combines and matures tequilas of different characteristics finished in unique casks, allowing the final agave harvest to remain at the heart of this rare Extra Añejo Tequila. Our Ultima Reserva has been rested in oak, previously used to age bourbon, and finished in Madeira wine-seasoned casks. Salud, to creating only the exceptional.

Initially aged for 4 years in large, wooden tanks that are over 60 years old at the distillery, followed by a 48-month rest in American oak barrels, this extra añejo tequila unveils aromas of cooked ripe agave, complemented by notes of honey, ripe pineapple, and hints of menthol and Darjeeling tea. It concludes with the essence of freshly ground coffee, bitter chocolate, berries, and orange peel. The flavor profile is sweet, with a slight astringency from the barrel, evoking memories of cooked agave and the once robust blanco tequila. This golden Tequila has an herbaceous aroma that suggests fresh basil and a hint of pineapple. The palate shows lots of vanilla—peppered with drying, spicy-hot dashes of cayenne, cinnamon and black pepper—and smoothed by a hint of tropical fruit on the finish.

Don Mateo de la Sierra Manso de Sahuayo is produced using Agave Americana var. Manso de Sahuayo (formerly known as Cenizo). This agave is endemic to the municipality of Sahuayo, Michoacan.
