Medium yellow/green colour. There are intense pea-pod & asparagus aromas. The palate is rich with a touch of sweetness/juicy ripeness, overlaid by toasty oak. The alcohol adds a touch of warmth & the acidity is quite tart, leaving green notes on the finish.

A floral flavour that conducts to honey joins the fruity base. Another distinguishing mark, coming from the long aging, is the spicy range dominated by the scent of the wood of the barrel that gives to this grappa perfumes of cinnamon, tobacco and liquorice, with a vanilla end.

Shichi Hon Yari Wataribune Junmai is a premium,, rustic-style sake from Tomita Shuzo in Shiga, Japan, brewed with revived, heirloom Wataribune rice. Milled to 77%, it is known for a rich, earthy, and complex umami profile, bright acidity, and a dry finish, often described as a "ricey" and comforting, versatile pairing option for hearty dishes.

Vigna Colonnello is ruby red with garnet hues. The nose is intense and well-balanced with notes of blueberries, raspberries and currants accompanied by balsamic hints, impressions of Mediterranean scrub and floral notes of dried roses. The well-balanced palate has a powerful and fine tannic texture while at the same time expresses great elegance. The finish is long and complex.

Julian and Carolann Castagna were running one of Sydney’s most successful film production houses. Julian had worked in the film industry as a Film Director all his working life but had become besotted by fine wine while working in London. Carolann was a Writer.

They decided to plant a vineyard in a place in Australia not yet universally recognised as a major viticultural area but one that Julian believed would be perfect for Syrah. Julian also believed that Italian varieties had great potential in the same place, so Sangiovese was also a possibility. Thus Syrah was planted, and later Sangiovese.
