Hirsch The Bivouac is a 100-proof Kentucky Straight Bourbon Whiskey, bottled-in-bond, that blends two different sourced bourbons from Bardstown, Kentucky. It features a primary blend of 3-year-old bourbon (74% corn, 18% rye, 8% malted barley) and a smaller amount of a higher malted barley, 6-year-old bourbon (72% corn, 13% rye, 15% malted barley) for added complexity. The Irishman Harvest, previously known as Founder's Reserve, is a blend of 70% single malt and 30% single pot still Irish whiskeys, crafted with 100% Irish barley and triple-distilled. Even in this vintage, Troplong Mondot possesses remarkable textural presence, but that richness is matched by notable freshness and linear drive. It was deeply impressive on the two occasions I tasted it. Élevage is planned to be 55% in new oak, 26% in 20HL barrels and 19% in once-used barrels."

"The 2024 Vieux Château Certan contains a higher proportion of Cabernet this year (23% Sauvignon and Franc combined) that was picked at 30 hl/ha between September 20 to October 2. That Cabernet is articulated on the nose: graphite and light tobacco scents percolating through the mainly black fruit. This has plenty of freshness and more fruit than some other Pomerol cuvées. The palate is medium-bodied, but there is much more weight and density on the back palate than nearly all of its peers. Distinctly peppery and quite spicy in style, this is one of the few to transcend the strict limitations of the growing season. In some ways, it is an uncompromising VCC that does not have the finesse of the greatest vintages I have tasted over the years, yet there is flavour and substance packed inside this nascent wine. Deeply impressive. This is one of the very few '24s that will oblige bottle age"

Its deeper ruby/purple hue is followed by a beautifully pure, layered, elegant, and medium-bodied Margaux that has both red and blue fruits, some violet, spicy wood, and cedar pencil nuances, fine, polished tannins, and outstanding length. This hit 12.6% alcohol with a pH of 3.53."

The wine is aged in oak barrels for 14 months, contributing to a long finish. It's known for its intense and complex palate, with nuances of violet, spice, and black cherry. The Reserve Syrah is crafted from fruit sourced from Mission Hill's estate vineyards in the Okanagan Valley, specifically Oliver and Osoyoos.

A serious 100% Gamay rosé from Haywire Winery, fragrant with layers of ripe strawberry, raspberry, cream, fine dried herbs and pepper spice flavours balanced with brilliant acidity and velvety with a long finish. Grapes for this vintage were whole cluster pressed to concrete, foudre and stainless-steel tanks and then aged in tank for seven months. We enjoyed it lightly chilled with juicy pork chops from the grill.

Haywire's Pinot Gris is a vibrant, dry white wine with a medium body, characterized by tropical and citrus fruit notes, with hints of herbs and florals. It features ripe stone fruits, pears, and a hint of oranges on the aroma, with a lighter mouthfeel but higher acidity on the palate
