In 1854, Hiram Walker, an American entrepreneur with interests in the flour and grain industry, ventured into whisky production in Detroit. At the time, many grain merchants and millers dabbled in whisky production as a means of utilizing surplus grain and milling by-products. However, with Michigan's burgeoning temperance movement threatening prohibition, Walker relocated his distillery across the Detroit River to Windsor, Ontario in 1858. To differentiate his Canadian-produced whisky from American counterparts and to denote its higher quality, Walker branded his product "Canadian Club." This whisky boasts a nose redolent of vanillans, with subtle notes of crystallized sugar and fresh fruit. On the palate, it reveals a rich complexity, showcasing stone fruits like plum and dried apricot, with oak undertones that are well-balanced despite its aging. The finish is long and harmonious, making it a standout whisky.

This scorching hot 32-year-old Speyside single malt was carefully aged at the Tomatin distillery starting from 1988, and recently bottled for the revitalized Connoisseurs Choice series by Gordon & MacPhail on March 15, 2021. Scotland has hundreds of islands, many of them familiar to scotch lovers, but the one known as Arran has flown beneath the radar. This sleeper single malt has a sublime aroma of bread dough that barely hints at the lively flavors that await in the glass, which include freshly shelled almonds, sweet berries, and clover honey, plus a toasty finish with a lovely (if not overly long) chocolate note. This entry-level Gibson’s is cut from the same fine cloth as the exquisite Gibson’s 18 and their lavishly flavorful 12 year old. Immediately, rum and butter laced with spirit and hot pepper seep into sweet and sizzling rye spices. Then light berry-ish notes turn to Concord grapes, pear juice, and soft yellow apples, as bitter walnut skins counter rich maple ice cream. A slight waxiness lends a satisfying weight.

Elegant, light and pretty. This amber spirit has a light, briny vanilla scent and a silky feel. A veil of smoke rises through the Scotch (but fades out fast), leaving behind a sweet nutty, vanilla finish.

Rebecca Creek Distillers had the opportunity to age their bourbon for up to four years in new Spanish Oak barrels in the attempt to produce a bourbon whose taste and colour resembled whiskey that was twice its age. The whiskey was then aged for a further two years in second-fill American Oak barrels to complete the unique, dual-aged maturation process. The mashbill for this whiskey is: 75% Corn, 21% Rye and 4% Malted Barley and it is bottled at true cask strength.

Hyde No. 5 The Áras Cask 1860 is a 6-year-old, triple-distilled single grain Irish whiskey matured in flame-charred ex-bourbon casks and finished in French Burgundy red wine oak casks. Bottled at 46% ABV, it features a ruby-red hue with a creamy, fruity profile highlighting red berries, custard, and sweet malt.

Each batch is a little bit different, this one leaning to sweet orchard fruits, nutty barley, and hot spicy rye. Butterscotch and vanilla on the nose translate well onto the palate. Brisk peppery spice underlies developing layers, adding another dimension of complexity to an already broad range of flavors. Hints of oak tannins on the finish remind us this was finished in Canadian wood.

Nikka Miyagikyo Single Malt is an elegant, well-balanced Japanese whisky from Sendai, characterized by a smooth, fruity, and slightly sherry-influenced profile. It features rich aromas of orchard fruits (apple, pear), malt, and floral notes, with a palate of banana, chocolate, vanilla, and light, gentle spices. 

Presented in a vibrant tin designed by illustrator Tavo Montaez, Patron Silver Tequila captures the essence of traditional Mexican heritage and culture. The tin artwork narrates the Aztec myth of the birth of agave from the tears of Ehecatl over the burnt bones of his love, Mayahual, embodying elements of water, fire, and wind that signify life's cycles of death and renewal. The very first edition from the Sakurao distillery, Kinbu vodka is unique in being entirely distilled from Yamada Nishiki rice, the most prized sake rice. 62% of this expression’s tequila was column-distilled, then aged in European barrels that were previously used to age wine. 38% of the tequila in this lot was distilled in an Alembic pot still, then aged in French Oak barrels. The result is a smooth, rich, and complex flavour profile.

Encased in a square bottle adorned with tactile raised graphics, this spirit brims with tropical fruit essences, notably pineapple and lychee, complemented by hearty caramel undertones and a hint of smoke. Tending towards dessert-like flavors, this Tequila from the highlands ventures into the realm reminiscent of añejo expressions.
