Made with Merlot, Portugieser and Pinot Noir, the wine is clean and fresh with notes of pale strawberries, raspberry and citrus; slight hints of fresh grapefruit and an underlying mineral base. The finish is dry and relatively long.

The Lelarge-Pugeot Extra Brut Millesime 2008 is a sparkling wine made from a blend of Chardonnay (60%) and Pinot Noir (40%) grapes grown in the Vrigny Premier Cru subregion of Champagne. It has a golden color with fine and persistent bubbles and aromas of ripe fruit, citrus, and brioche. On the palate, it is dry, complex, and full-bodied, with flavors of white peach, apricot, toasted almonds, and a hint of honey. The wine has a long and mineral finish, which makes it a great pairing for seafood, white meat, and creamy dishes.

The Lenoble Les Aventures Blanc de Blancs is a sparkling wine made from 100% Chardonnay grapes grown in the Chouilly Grand Cru subregion of the Champagne wine region in France. Fernet Leopold Highland Amaro combines the herbal essence of traditional fernets with a distinctive mint character, creating a truly unique flavor profile. This is achieved through a meticulous process of steeping bitter roots in the spirit, followed by the addition of rose petals, elderflower, chamomile, and honeysuckle, resulting in a rich and complex finish. The second label of First growth Chateau Latour is just as impressive as its big brother, and at 12 years old, if there is more than one bottle in the cellar, time to see how it's evolving. Not an epic vintage, but well made, nonetheless. The tannins are fresh, there is good weight in the mouth and the typical flavours of cassis, cedar and graphite are here in this iconic Pauillac.

Les Griffons de Pichon Baron 2018 reveals a deep, almost black colour. The nose is delicate, with notes of black fruits and a hint of subtle, well-integrated wood. The palate is generous and full, with powerful and luscious tannins. The balance is rich and harmonious with tension.

The 2016 Pagodes de Cos is deep garnet in color. It gallops out with vibrant notes of crushed blackcurrants, warm blackberries, and Morello cherries, plus suggestions of tilled soil, tapenade, and iron ore. Light to medium-bodied, the palate is wonderfully elegant, with delicately played, silky tannins and fantastic tension framing the perfumed fruit, finishing on a mineral note.

The 2021 Les Pagodes de Cos is a strong effort, offering up aromas of cassis, charcoal, dark berries and cigar wrapper, followed by a medium to full-bodied, sweet and fleshy palate that's quite rich and extracted, concluding with a saline finish. It's a blend of 60% Merlot, 36% Cabernet Sauvignon, 3% Cabernet Franc and 1% Petit Verdot. 2025 - 2035

An exquisite fusion of Garnacha and Cariñena (Carignan), offering a compelling alternative to Cotes du Rhone. Camino del Bosque, made with 60% Garnacha and 40% Cariñena, is sourced from the village of Almonacid de la Sierra in Zaragoza. The former undergoes fermentation in stainless steel, while the latter takes on the process in concrete and oak, utilizing indigenous yeasts. Maintaining a meticulous aging process, thirty percent of the blend matures in concrete, around 5% in clay pots (tinaja), and the remainder in oak barriques and oak vats over a 14-month period. The wine region Carinena is located in the province of Zaragoza and is one of the oldest protected European production regions. It is the only region that actually gives the name to one of the main red grape varieties of Spain and southern France – Carinena and Carignan respectively. A high elevation vineyard and low yields produce an elegant expression of this grape variety. The fermentation takes place with wild yeasts. A soft extraction and light pressing ensure that the tannins are not too strong and are well integrated in the final blend. A beautiful expression of a rare 100% varietal Carinena.

This Lambic has been infused with 30% pure raspberry juice giving it a dark pink colour with a creamy pink foam – it also gives the beer a very big punch of fresh raspberries on both the nose and palate. Although there is some extra complexity under the fruit, it is quite subtle. This beer has a very alive carbonation feel with a refreshing finish and just a touch of sweetness to draw you back for more.

Visually vibrant dusty purple with a thin head that laces the glass, this kriek is a lovely combination of tart black cherry and sweet red cherry candy. Lively carbonation keeps the fruit dancing on the tongue. Slight yeast funk adds umami to the glass before finishing dry. John Holl
