El Dorado 15yo is a remarkable rum, whose greatest achievement was collecting the Wray & Nephew Trophy for Best Rum in the World at the International Wine & Spirits Challenge for an unprecedented four years running.

Nose: The best Christmas cake you can imagine. Refined, enticing aromas of candied peel, allspice, cinnamon, dried fruit and golden syrup.

Palate: Complex, spicy dried fruit, with interweaving layers of honey, gingerbread and toasty oak. This is very classy stuff, never overbearing.

Finish: Honeyed, spicy finish that persists.

Comment: An exceptional rum, which has complexity in spades yet is beautifully balanced. Anyone who dismisses rum as a one-dimensional category should try this, and prepare to be wowed.

The El Dorado 12 Year Old Special Reserve Rum is blended from aged stocks (the youngest being no less than 12 years old) from the original Wooden Enmore Coffey still, the original metal Diamond Coffey still, as well as from the ancient Port Mourant double wooden pot still which was used to produce ‘navy’ rum for the English Admiralty. All of the Demerara Rum produced by El Dorado is aged exclusively in American oak (bourbon barrels).

Nose: Sweet, toffee, vanilla, spices, oak. Hints of smoke.

Palate: Cocoa, caramel, prunes, spices, vanilla.

Finish: Long, sublimely smooth, hints of smoke on the tail.

INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.

Irish single grain whiskey from Teeling! Rhiannon is the 7th chapter in Penderyn's Icons of Wales Series. Finished in sherry wood, the whisky is named after Rhiannon, an enchantress and horse goddess who could outrun any pursuer while riding slowly. Rhiannon in Welsh means 'Great Queen' or 'Divine Queen.'

On the nose, soft notes of raspberries and strawberry liqueur, as well as some melted butter, cassis, and candy canes. Hints of peanut skins and pastries. Needless to say, it is very sweet. The taste has more sweetness on arrival and is pretty much a continuation of the nose. Plenty of berries, but also some caramel sweetness. The wood has also infused some spiciness.
