Dassai Mirai "Future with Farmers" is a unique Junmai Daiginjo sake from Dassai, crafted with Yamada-Nishiki rice that has been polished down to 8%. This sake is a special release, born from Dassai's commitment to supporting local farmers and sustainable practices. It uses "out-of-grade" rice that doesn't meet the size or shape requirements for top-tier sake, which allows them to reduce waste and support farmers. Despite not being classified as a Junmai Daiginjo due to the rice being ungraded, it drinks like one, offering a gentle off-sweet beginning, a smooth mouthfeel, and an elegant finish.

Dassai 23 Bisui Elegantly Tipsy is a limited-release, low-alcohol Junmai Daiginjo sake from Dassai, known for its refined elegance and delicate flavors. It achieves a low alcohol content (under 12%) through careful control of fermentation and temperature, without dilution. Despite the lower alcohol, it retains the signature elegant fragrance and refined taste profile of Dassai 23.
Dassai '39' Junmai Daiginjo is a premium sake known for its balance and elegant flavor profile. It is crafted by Asahi Shuzo brewery in Yamaguchi Prefecture, Japan, using Yamada Nishiki rice polished down to 39% of its original size. This process results in a refined sake with a delicate balance of sweetness and acidity, featuring notes of melon, pear, and floral aromas.
