Jack Daniel's is a brand of Tennessee whiskey, not just bourbon, produced at the oldest registered distillery in the United States. It is known for its unique charcoal mellowing process and is technically considered a bourbon due to its production methods, but it is specifically called Tennessee whiskey due to the additional mellowing step.

Jim Beam White, also known as Jim Beam Kentucky Straight Bourbon Whiskey, is a classic American bourbon known for its approachable and versatile character. It's aged for four years in new, charred American white oak barrels, imparting a smooth and balanced flavor profile with notes of vanilla, caramel, and subtle spice. It's a popular choice for both sipping neat, on the rocks, or in classic cocktails.

Michter's has reintroduced a once-popular whiskey into their lineup, showcasing the traditional sour mash method where a portion of the fermented mash from one batch initiates the fermentation of the next. This revival offers upfront flavors of burnt sugar, spice, tree fruit, and vanilla, leading to a finish characterized by notes of ginger and black pepper. It pairs excellently with barbecued ribs or pecan pie.

Blackberry and light dried fruit with oyster-shell undertones. It’s full-bodied with round, lightly chewy tannins that nicely accentuate the fruit character. Walnuts and wet earth. Delicious now, but better in two or three years.

Maker's Mark Cask Strength 2023 offers a bolder, richer profile compared to the regular Maker's Mark, with notes of raisin bread, blueberry pie, and cinnamon buns on the nose. The palate is described as mouth-coating and waxy, with flavors like angel food cake, pink popcorn, and canned peaches. The finish is long and balanced, with touches of red Twizzlers and toasted oak.

Caymus Special Selection is always a selection of the best barrels that play to a style constantly pushing the limits of richness and concentration, in this case, clocking in at 16% alcohol. The nose is slightly cooked and raisiny with plenty of cassis, chocolate, and coffee spilling onto the palate. Blackberry jam, pipe tobacco and brown spices line a richly dark, dense tannin finish. It is only made in the best years, but I wouldn’t mind if this was throttled back a bit.

Blackened Whiskey’s Master Distiller & Blender, Rob Dietrich, teamed up with Rabbit Hole Distillery’s Founder & Hall of Fame whiskey maker, Kaveh Zamanian, to create BLACKENED x Rabbit Hole.

The nose tickles with caramel, spice, vanilla, and earthiness, with just a hint of balsamic vinegar. Warming. Coated with spices, ranging from cinnamon to allspice and from coffee to nutmeg. Eventually, patented caramel and vanilla, with a fun hint of cardamom. The long, enjoyable finish is earthy, but there’s an unwanted bitterness at the end that cannot be denied. If not for the bitter end, this would rate much higher.

Traditionally, Palermo was a blend that included wine not used in Mercury Head or Papillon, but winemaker Dave Phinney now sources fruit specifically for this bottling. The Cabernet Sauvignon Palermo, aged for 11 months in 34% new oak and crafted from a blend of estate-grown and purchased fruit, also incorporates small proportions of Merlot and Malbec. It presents aromas of cherries, cassis, and subtle earthiness, complemented by hints of cinnamon and nutmeg. Full-bodied and well-balanced, it offers a combination of firmness and softness, resulting in an overall enjoyable drinking experience.

Jack Daniel's Single Barrel Barrel Strength (BP) at 62.5% ABV is an intense, high-proof Tennessee whiskey bottled straight from individual barrels, showcasing bold flavors of vanilla, toasted oak, sweet brown sugar, caramel, and dark spices, with notes of fruit and nuts, offering a rich, smooth, and powerful sipping experience unlike the standard JD, thanks to its high proof and selection from upper rickhouse barrels.

BLACKENED Whiskey celebrates Metallica’s much-anticipated new album with the Limited Edition 72 Seasons Batch, using the album in the sonic-enhancement process. This limited-edition bottle features elements inspired by the album, including a striking yellow capsule with the signature Metallica M and the 72 Seasons logo prominently displayed on the front. “It’s kind of like we’re bottling key Metallica memories with these limited-release batches. We did it with S&M2 and The Black Album, and now we’re doing it with 72 Seasons. It’s awesome to share this experience with the band and the fans,” says Rob Dietrich, BLACKENED’s Master Distiller & Blender.

This blend of straight bourbon whiskies, finished in red wine and sherry casks, offers a delightful array of aromas and flavors. The nose entices with inviting grain notes, reminiscent of porridge, accompanied by a medley of spices including cinnamon, clove, and spearmint. Subtle hints of baked apple, citrus oil, honey-roasted peanuts, and milk chocolate add layers of complexity. On the palate, nutty grain flavors take the lead, intertwined with red fruit, caramel, and vibrant spices like black pepper, cinnamon, and candied ginger. Citrus oil, walnuts, and a touch of cigar tobacco emerge, leading to a nutty and somewhat light finish. Distilled by Jim Beam master distiller Fred Noe and expertly blended by Suntory master blender Shinji Fukuyo, this bourbon offers a harmonious balance of flavors and textures, making it a true delight to savor.

INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.

Winemaker notes:
Overture reflects the winemaker's artistry by showcasing the talent of blending five traditional Bordeaux grape varieties and capturing terroir characteristics of the same variety grown in different soils. However, Overture's third blending aspect - that of marrying multiple vintages - yields a softer, rounder expression of our estate that can be enjoyed upon release.Overture is full bodied but approachable in its youth. Overture shows generous dark fruit aromas and flavors with a soft, supple mid-palate.

The Cask 23 wine combines the signature perfume of grapes from the Fay vineyard with the structured and dark fruit of the SLV. The wine opens with fragrant and fresh aromas ofred and black currants, black tea, anise, and nutmeg. Vibrant with savoury notes, blackberry and blackcurrant flavours. The tannins are velvety and refined, and the oak is well integrated. This wine scored almost perfect - 99 points. ecause we also carry the 2018, this is a great opportunity to create a mini-vertical.

Bardstown Origin Series Kentucky Straight Bourbon is a 6-year-old, high-rye (36%) bourbon from Bardstown Bourbon Co. bottled at 96 proof (48% ABV). It features a balanced, modern profile with notes of apricot, orange blossom, and mint, complemented by rich caramel, nutmeg, and toasted oak, culminating in a bold finish.

Conundrum Red is a rich, full-bodied California red blend (Zinfandel, Petite Sirah, Cabernet Sauvignon) known for its complex, approachable profile, featuring dark fruit (cherry, plum, blackberry) balanced with notes of chocolate, smoke, and spice, offering a smooth, grippy texture with fine tannins, and best enjoyed slightly chilled to enhance its vibrant fruit and unique character.

Angel's Envy Triple Oak is a Kentucky Straight Bourbon finished in a blend of Hungarian, Chinkapin, and French oak barrels, creating a complex profile with notes of baking spices, caramel, vanilla, chocolate, dried fruit, and toasted nuts, balanced by a long, spicy finish with hints of pepper and molasses, offering rich sweetness and warmth.

Winemaker Notes : The Opus One 2018 offers profuse aromas of blackberry, cassis, and black cherry. Elegant notes of violets, white pepper, and rose petals follow and together they deliver a very seductive bouquet. The seamlessly layered flavors build to a crescendo of fresh and juicy black-fruit, accented with hints of orange zest, licorice, and dark chocolate. Beautifully balanced, the smooth round tannins and fresh acidity combine to create a soft, creamy mouthfeel and extend the flavors into a long persistent finish.

Basil Hayden's is a Kentucky straight bourbon known for its lighter, spicier, and more approachable profile compared to other bourbons. It's a small-batch bourbon, artfully aged at 80 proof, with a golden amber color. It's known for its rich cascade of aromas and flavors, including spice, tea, and a hint of peppermint on the nose, and a spicy, peppery, honeyed taste with a gentle bite. The finish is described as dry, clean, and brief.

Nelson Bros Classic Bourbon Whiskey is described as having a complex and flavorful profile with notes of spice cake, cherry, milk chocolate, vanilla, and baked apple on the nose.
