"Shinobu Distillery is located in Niigata (Koshi area) of Japan, which is famous for its “Three White” treasures namely snow, rice and sake. Quality whisky selected from all around the world is reserved in bourbon and sherry casks for more than 3 years and later finished with precious Mizunara oak in Japan. “Shinobu” in Japanese means forbearance, which is considered an important trait of Japanese culture; thus, the name reflects the spirit of making good whisky.

Tasting Notes:

Nose: Vanilla, plums, minty.

Palate: Slightly sweet, spices, vanilla, citrus, smoky oak.

Finish: Medium, sweet, woody, minty, slight bitterness.

Nomad is a unique whisky. A collaboration between sherry producer González Byass and Whyte & Mackay master blender Richard Paterson. A blended Scotch whisky aged for more than five years in sherry butts is shipped to Jerez for further year's ageing in PX casks.

Woodford Reserve Wheat is based on historical recipes but influenced by the iconic core Woodford Reserve Bourbon brand. With wheat as the dominant grain at 52 percent, followed by malt (20%), corn (20%) and rye (8%) - this whiskey was created by renowned Master Distiller Chris Morris.

Woodford Reserve — a super-premium bourbon created 23 years ago in Woodford County, Kentucky — has looked to history for inspiration in its products, but it is ultimately a modern bourbon focused on flavor. Each of the four Woodford whiskeys, along with Woodford Reserve Double Oaked, brings a different flavor profile to the palate. Bourbon is a balance of many flavors, rye is spicy, malt is nutty, double oaked is sweet and wheat is fruit-forward.

Rhiannon is the 7th chapter in Penderyn's Icons of Wales Series. Finished in sherry wood, the whisky is named after Rhiannon, an enchantress and horse goddess who could outrun any pursuer while riding slowly. Rhiannon in Welsh means 'Great Queen' or 'Divine Queen.'

On the nose, soft notes of raspberries and strawberry liqueur, as well as some melted butter, cassis, and candy canes. Hints of peanut skins and pastries. Needless to say, it is very sweet. The taste has more sweetness on arrival and is pretty much a continuation of the nose. Plenty of berries, but also some caramel sweetness. The wood has also infused some spiciness. The finish has a lingering sweetness and is somewhat drying.

Chivas Regal 12 Year Old is a great introduction for those looking to experiment with Scotch whisky. It is aromatic with wild herbs, heather, honey and orchard fruit notes. The round and creamy palate tastes of honey and ripe apples, with vanilla, hazelnut and toffee flavours, followed by a rich and lingering finish.

Basil Hayden's is a Kentucky straight bourbon known for its lighter, spicier, and more approachable profile compared to other bourbons. It's a small-batch bourbon, artfully aged at 80 proof, with a golden amber color. It's known for its rich cascade of aromas and flavors, including spice, tea, and a hint of peppermint on the nose, and a spicy, peppery, honeyed taste with a gentle bite. The finish is described as dry, clean, and brief.

Aged for twelve years in Pedro Ximenez and Oloroso sherry casks, this whisky presents a deep amber hue with captivating red highlights. Enticing aromas of sweet vanilla, figs, and a subtle hint of ginger mingle with enticing sherry notes. On the palate, it offers a luxurious and velvety-smooth texture, unveiling rich oak, sweet sherry, and succulent raisin flavors. This expression is reputed to contain some whisky up to 40 years old and was matured in a mix of bourbon and sherry casks. The nose offers overt sherry influences, with fruit malt loaf, maple syrup, honey, and old leather. Full and slightly oily on the rich palate, with toffee, raisins, Brazil nuts, and fresh cake mix. Dusty spices and oak in the relatively dry finish.

Padre Azul Añejo is a premium 100% Blue Weber agave tequila from Jalisco, Mexico, aged for at least 18 months in hand-selected oak bourbon barrels. It features a complex, smooth profile with prominent notes of vanilla, caramel, chocolate, cinnamon, and dried fruits, boasting an extremely long, refined finish.

It’s an easy progression why we would use Alberta’s famous Taber Corn from the Molnar Farm in our corn mash allowing you to not only eat your Taber Corn, but drink it too. 

A blended whisky from Suntory's three distilleries: Yamazaki, Hakushu and Chita. Toki has a different composition to another Suntory blend, Hibiki, as its main components are Hakashu single malt and Chita grain whisky. It should work really well in a highball.

This whisky is an ex-Bourbon cask finish and is bottled at 46% abv, and is the first time Penderyn have released a core range single malt using mainly spirit from the pot stills, which we introduced in 2014.

Tasting Notes

Nose: Elegant and floral with light oak notes, vanilla, raisins, toffee apples, citrus peel and a hint of lime.

North America's first single malt whisky distillery. A single malt from this side of the sea, aged 10 years in oak barrels. The crystal clear water from Maclellan's Brook flows from the Mabou highlands located above Glenora distillery, giving Glen Breton its classic and pure taste. Produced by the traditional copper pot stills methods using only three ingredients: barley, yeast and water.

Evan Williams Black Label is a widely popular, value-priced 86-proof Kentucky Straight Bourbon produced by Heaven Hill Distillery. Aged for at least 4–5 years, it features a medium-amber color with a, robust, traditional flavor profile of caramel, vanilla, and oak, making it ideal for mixing or budget-friendly sipping.

Macaloney's "The Peat Project - WA RW 46%" is a Canadian single malt whisky that is part of a single cask series, known for balancing intense peat smoke from Washington State with fruity notes derived from maturation in a Portuguese re-charred red wine (RW) barrique. The whisky has a substantial peat smoke content of 54 PPM (parts per million).

Sheep Dip is a premium small-batch blended malt Scotch whisky, crafted from single malts across Scotland into a sophisticated blend with a robust character. This whisky features a nose of bold fruit aromas including melon, pear, and orange, with citrusy botanicals, sweet marzipan, and spicy oak. The Macallan Rare Cask is a rich, complex single malt from Scotland, crafted from the distillery's rarest sherry-seasoned oak casks, offering notes of vanilla, raisin, dark chocolate, and citrus zest, with a velvety finish, showcasing Macallan's mastery of wood and natural color. It's an annual release, non-age-stated, selected by whisky makers for its opulent aromas and full-bodied character. 

The GlenAllachie 15 Year Old is a rich, sherried Speyside single malt Scotch whisky matured in Pedro Ximénez and Oloroso sherry puncheons and hogsheads. Bottled at 46% ABV, it is non-chill filtered and has no added color. It features a dark, mahogany color with a flavor profile dominated by sweet spices, raisins, dark chocolate, and the distillery’s signature heather honey.

Glenmorangie "The Cadboll Estate" 15-Year-Old is the first single estate whisky from this Highlands distillery. The single malt was made from barley grown on the brand's 440-acre Cadboll Estate located near the distillery. The single malt matured in first-fill American oak ex-bourbon barrels for 15 years, before enjoying a finishing period in casks that once held Muscat and Sémillion wines.

Appearance: Deep gold in colour.

Nose: Cookie dough with plenty of raisins, dried orange peel, chocolate chips and hints of lemon verbena grassiness.

Palate: Thyme honey, melted butter, green apple boiled sweeties and aromatic barley.

Finish: Red fruit sweetness balanced by rounded malt.

Green River Full Proof is a 117.3-proof (58.65% ABV) Kentucky Straight Bourbon, aged 5–7 years and produced in Owensboro. It is a high-rye (70% Corn, 21% Rye, 9% Malted Barley) blend delivering rich caramel, vanilla, and heavy spice notes

Crafted in the tradition of classic Pennsylvania or 'Monongahela' rye whiskeys, this expression pours a light amber hue and entices with aromas of sweet corn, vanilla, brown sugar, and spice. On the palate, these flavors are complemented by floral and spice notes in the background, culminating in a long and smooth finish.

Macaloney's Peat Project Islay Ex-Bourbon Cask (EBC) is a Canadian single malt whisky using traditional Islay peat for smoking and aged in bourbon casks, offering a unique "terroir" comparison by blending Scottish peat character (iodine, seaweed, tobacco) with Canadian craftsmanship (vanilla, fruit, honey from the bourbon cask), creating a smoky, maritime, yet sweet and complex dram balancing medicinal notes with classic bourbon sweetness, according to Macaloney’s Distillery and Strath Liquor Merchants.

This velvety spirit has some roasted apple and pear lurking beneath the cavalcade of spices that march on through the medium-long finish – nutmeg, cinnamon, allspice, and even some star anise make this bourbon a natural for a strong cocktail like an Old-Fashioned.
