IWA 5 Assemblage 3, a sake by Richard Geoffroy, is known for its elegant and complex profile. Tasting notes reveal a vibrant aroma with floral and fruity elements, often including peach and apricot, alongside a hint of minerality. The palate is smooth and balanced, showcasing a delicate umami layer and a crisp, enduring finish. It also exhibits notes of white pepper, a signature characteristic of IWA.

93 points Vinous: "The 2016 Lascombes is grown into a gorgeous wine. Blackberry jam, chocolate, new leather, espresso and copious new oak all flesh out in this ample, resonant wine. As always Lascombes is done in a style that brings out the more lush, flamboyant side of Margaux. In this vintage, all the elements meld together effortlessly, something that isn't always the case. Cigar box, smoke, herbs, cassis, espresso and blackberries with a savoury edge open the wine aromatically. The palate offers freshness, layers of ripe, spicy currants and peppery blackberries with chewy tannins that hang with you, providing length, vibrancy and refinement in the finish. This is going to age and evolve for decades.

Chateau Gazin is a high quality winery located in the Pomerol AOC on the right bank of Bordeaux, representing five generations of owners and growers. With 23ha of vineyards, the clay-gravel plateau is perfect for merlot and cabernet franc. The 2019 is a blend of 89% merlot, 7% cabernet sauvignon and 4% cabernet franc. A solid Pomerol that has spicy red and black cherry fruit, notes of cedar, violets and plum with a vull-bodied, velvety and textural palate. This will no doubt age incredibly over the long haul!

" I loved the 2016 Château d'Issan and this is a certainly a wine to seek out. Made from a blend of 64% Cabernet Sauvignon and 36% Merlot from yields of 55 hectoliters per hectare, aged 18 months in 50% new oak, it has a beautiful perfume of blue fruits (cassis, blueberries, etc.) as well as hints of graphite, subtle oak, and charcoal. Medium to full-bodied, with integrated acidity, a terrific mid-palate, and perfect balance, it needs 4-5 years of bottle age and is going to cruise in good cellars for 20-25 years or more. Palate: The finish is long and satisfying, with lingering notes of sweet toffee, toasted oak, and a gentle hint of smoke. Overall, Hyde No. 4 Presidents Cask '1922' Single Malt Irish Whiskey is a beautifully balanced and luxurious whiskey, showcasing the best of Irish craftsmanship.

For six generations, Domaine Noellat has been farming their 20ha of land. With entreprenurial spirit, the family was always looking to adapt to new technologies, while respecting the traditions handed down from one generation to another. The cellar was built in 1980 while in 2007 an ultra modern winery was erected with state of the art stainless tanks and a dedicated tasting space in the cellar. Cousins Sebastien and Sophie work closely together making strategic decisions based on the nature of each harvest. Vosne-Romanee is more of an "elegant" appellation, where you'll find soft red fruit of cherry and strawberry and hints of mint and vanilla-chocolate.

Winemaker Notes
Blend: 70% Sauvignon Blanc, 30% Semillon
Recognized for its superior reds as well as whites, Pessac-Leognan on the Left Bank claims classified growths for both—making it quite unique in comparison to its neighboring Medoc properties. Its best whites show complexity, longevity and no lack of exotic twists on citrus, tropical and stone fruit with pronounced floral and spice characteristics.

Who is afraid of warm years? Hardly the Port elite. Aromas of tropical woods, black cherry and Assam pepper, allspice, poivre long. Short softness, firm acidity, then a gripping, dry but ripe tannin. With air contact, the port becomes increasingly floral and slate-spicy. (A bottle of this port was also the first Port in Space!)

Once past the opening bouquet of white flowers and dried roses, you find plums, black cherries, black raspberries, mint and cigar wrapper nuances. The palate provides a lush, opulent, vibrant, energetic backdrop for its wealth of deep red fruits and oceanic influences. The finish has a touch of salty chalk that adds complexity to its wealth of silky, ripe, red fruits.

The Armagnac Castarede hails from the historic Castarede family, who have been producing Armagnac in France since 1832. This expression offers a rich nose of stewed fruits, cedary oak, pecans, honey, plums, and a touch of white pepper. Over time, the aromas evolve into sweeter notes of vanilla, sticky dates, and old muscat. On the palate, it's silky and elegant, showcasing dried fruits, bread pudding, toffee, and baking spices, complemented by gentle fine tannins on the finish. The result is a refined Armagnac with great finesse and a surprisingly delicate character for its age.

Wines from Puligny-Montrachet are typified by aromas and flavors of green apple and lemon and tend to be tauter and firmer on the palate compared to wines from neighboring villages. Aging in a small percentage of new French oak barrels lends accents of toast and vanilla. Structured white wines with high acid and grip, Puligny-Montrachet is destined for long aging.

In 2021, the vines of Cos d’Estournel Blanc yielded a graceful wine that is rich and finely structured, thanks in part to their ongoing ability to delve deeper in the estate’s soils but also thanks to the breezes of the nearby Gironde Estuary and the ongoing efforts of the estate’s teams. The Sauvignon Blanc grapes are concentrated but balanced by the natural vivacity of their terroir, while the Sémillon —whose distinct mineral character derives from the limestone in the vineyard’s soils– are once again used in a larger proportion in the final blend. Extremely complex, Cos d’Estournel Blanc 2021 is a magnificent, harmonious expression of white peach, rose, bergamot, lemon, and flint. Remarkable energy accompanies a rich, precise palette of aromas, resulting in an accomplished, fascinating wine with great cellaring potential.

In France, this wine style is traditionally termed "oeil-de-perdrix," translating to "eye of the partridge," owing to its pale pink hue. Joseph Wagner and the Pinot Noir experts at Belle Glos meticulously cultivated the grapes with the aim of crafting this lively, fresh rosé. Bursting with bright citrus, tangy fruit, and herbal spice notes, it's an ideal companion for brunch or salmon dinners.

Post Malone collaborated with a cooperative of esteemed winemakers in Provence, France, to create this grenache-based rosé. With a pale salmon hue, it offers enticing aromas of strawberry and lavender. Delicate flavors of watermelon and lemon zest minerality make it an ideal companion for sushi.

Mortlach, famed for its rare sweet yet savoury taste among Speyside malts, presents this unique expression finished in ex-Kanosuke Japanese Whisky White Oak casks and ex-pinot noir French Oak casks. Inspired by the elegance and precision of the katana, the whisky reveals bold mysteries of the midnight hour with a golden gleam that introduces sweet aromas of ripe melon and pear, balanced by spiced flavours. The umami-rich taste lingers in the long, enticing, and spicy finish, embodying the deep complexity of the mighty katana.

A deep, dark red-black color is almost opaque with a purple rim. Juicy black-cherry aromas are overlaid by vanilla, spices, ginger & orange peel with high-toned raisin & attractive clean cedar notes. After the nose, the palate is muted at first. Fine, velvety tannins gives good bite & a concentrated bitter licorice nature to the dark-fruit. On the mid-palate cedary oak overlays juicy black-cherry fruit. A long elegant finish has exotic warm spices.

Combining Malbec, Zinfandel, Petite Sirah, Cabernet Sauvignon and pinches of Petit Verdot and Carignan, this is a rich and densely packed red that is supple on the palate in integrated tannin. Dark plum, vanilla, cherry cola and toasted oak give it a crowd-pleasing approachability. Virginie Boone

The whiskey pays homage to the Sazerac Coffee House in New Orleans, where the iconic Sazerac cocktail was born. Thomas H. Handy, owner of Peychaud’s Bitters, acquired the establishment and sold bottles of the famous cocktail, initially crafted with Cognac. Today, this esteemed libation is crafted at the Buffalo Trace distillery.

Earthy aromas include herbal notes, a hint of tomato sauce, asphalt and dusty berry fruits. This has a raw tannic exterior but is softer in the middle. Flavors of saucy, herbal plum and blackberry come with notes of tobacco and olive, while this is drawing and gritty on the finish, with a roasted quality.
