In 1854, Hiram Walker, an American entrepreneur with interests in the flour and grain industry, ventured into whisky production in Detroit. This scorching hot 32-year-old Speyside single malt was carefully aged at the Tomatin distillery starting from 1988, and recently bottled for the revitalized Connoisseurs Choice series by Gordon & MacPhail on March 15, 2021. Drawn from refill American hogshead number 6656 at its natural cask strength of 54.6% ABV, this rare release comprises just 145 bottles, each elegantly presented in a lovely oak presentation case.

Rebecca Creek Distillers had the opportunity to age their bourbon for up to four years in new Spanish Oak barrels in the attempt to produce a bourbon whose taste and colour resembled whiskey that was twice its age. The whiskey was then aged for a further two years in second-fill American Oak barrels to complete the unique, dual-aged maturation process. The mashbill for this whiskey is: 75% Corn, 21% Rye and 4% Malted Barley and it is bottled at true cask strength.

Distilled in the late winter of 2006, this unique expression of tequila was crafted with two-thirds distilled in a modified double-copper column still to achieve a lower proof, and the remaining third distilled in an alembic pot still. For the aging process, one-third of the batch was placed in American white oak casks that had previously aged California red wine, while the remaining two-thirds were aged in used dark French oak barrels. These casks were then aged for a full 11 years at an elevation of 3,800 feet in a cool, subterranean barrel room.
