White Wine
Canadian Robert Tome learned his craft of hospitality in Italy, studying with the Italian Sommelier Association. He opened his own import agency, which quickly became one of the largest agencies in Canada representing some iconic Italian wineries. In 2017, Robert decided to challenge himself to do more and give more with a new endeavor. He sold his shares and branched out on his own to launch Tomé Group of Brands, his own wine brand making wines from Washington State and Italy. This vegan-friendly Pinot Grigio is clean and crisp, layered with notes of apple, pear, almond, and white nectarine with a twinkle of acidity. This is a great match with seafood, pasta with cream sauce, oyster, asparagus and summer salads.

The longest-standing expression in the range, 10 year old was introduced in 2002. It offers a nose that is light and initially green, with unripe apples, acetate, ripe pears, bananas, and light fudge. The palate is relatively insubstantial, with nutty milk chocolate, vanilla, brittle toffee, and oak. Nutty in the short finish, with a hint of malt and drying oak.

This aromatic spirit is scented with citrus peel, rose Turkish delight, florist shop notes, honeycomb, candied orange halves, pear, and gentle wood spices. The palate begins with fruity flavors of citrus, dried apple, and star fruit, transitioning to a creamy texture with vanilla, malt, Oreos, and oak tannins. It leaves a lingering finish of cocoa, delicate spices, and residual fruitiness.
Nose: Rich and sweet with notes of dried fruits, raisins, and figs. Hints of toffee and caramel.
Taste: Smooth and velvety on the palate. Flavors of dark chocolate, orange peel, and Christmas cake. Slight nuttiness and a touch of spice.
Palate: Full-bodied and luscious. The sherry influence is prominent, bringing forth flavors of dried fruits, cinnamon, and cloves. A long and warming finish with a lingering sweetness.
Nose: Rich and fruity with notes of ripe peaches, apricots, and honey. Subtle hints of vanilla and oak.
Taste: Smooth and creamy with flavors of sweet white grapes, honeydew melon, and a touch of citrus. Slight spiciness with a gentle warmth.
Palate: Delicate and well-balanced. Creamy mouthfeel with a luscious sweetness. The white port cask finish adds a unique depth and complexity, enhancing the fruity and honeyed character.
Red Wine
Tommasi Amarone is known for its intense ruby red color and complex aromas of ripe fruit, often with notes of cherry, plum, and dried fruit, along with balsamic and spice undertones. On the palate, it's full-bodied with a smooth texture, well-balanced acidity, and a long, persistent finish.

Very intense ruby red color, the nose reveals intense and clean scents of very ripe cherry, black cherry, wild berries followed by fresh and slightly spicy tones. In the mouth it is dry and soft at the same time, enveloping and of great balance thanks to the excellent balance between acidity and tannins. The whole tasting is embellished with a very pleasant tannic texture, which fades towards a finish of excellent persistence, with light hints of red fruit.

What's in the bottle is a mix of four-year-old rye blended with a small portion (22%, to be exact) of rum sourced from the Caribbean and South America. Since 1928, Torres has been making world-class wines and brandies. Unless it is produced in the Armagnac or Cognac regions of France, it must be referred to as brandy. Spanish brandy is unique because it is made from a variety of Spanish grapes and is quite possibly one of the most recognizable Spanish brandies in the world.Jaime (pronounced Hy-me) is made exclusively from the Parellada variety of grapes and is aged using the solera method. Not only is the bottle gorgeous, but the brandy inside is complex and well-balanced with flavors of walnut, cedar and sandalwood.

This is a classic Scotch ale, and although it's not cheap, it's definitely worth trying at least once. This is a beer to be enjoyed and savored with each sip, and not mindlessly guzzled, lest you miss the gorgeous subtleties and nuanced notes that make it so darn good. Lightly roasty caramel malts are the backbone here, with accents of dried figs and dates, fresh butterscotch sauce and soft whole baking spice. The palate is full and creamy, with great weight to the rich malt flavors, and soft hints of hops, cocoa nibs and earthy bark unfolding on the close.

This vineyard planted back in 1937 is quite unique. Just a mile and a half from the Napa border on the Sonoma side of the Mayacamas, the vines are planted at a 900 feet altitude along steep, contoured terraces (now prohibited). The extraordinary vines sit in the fog and has adapted to these special features. The grapes have a thicker, tougher skins. The result is a very deep purple wine with increased and impressive structure & tannins. It also has a scabrous character like a peach skin effect.

Deep dark red in color with a purple core, this wine offers lifted notes of red jellies, blueberry, lavender and gentle accents of pepper with an intriguing overlay of Morrocan Spice Temple. Angels’ Share is medium- to full-bodied in nature, gleaming with bright primary fruits of red berry and blueberry. The acid is bright and frames the fruit nicely, giving good share and vibrancy to the palate. Floral accents of lavender and freshly cut flowers give good palate complexity. Tannins are chalky in nature and provide great texture to frame the wine. The palate is very boyant with great length and persistence in flavor.
From the coolest part of the state as the weather rolls in off the Southern Ocean. The latest block to be brought to the winery, this is an elegant wine with a unique aromatic profile and tannin structure. A recent grape source from a vineyard next to Hope Forest, this is a site we harvest late, allowing slow development of ripeness and tannin. The moderating effect of the southern ocean in conjunction with the site's elevation provides finer red fruit characteristics. The wine is named after Michael's daughter, Harriet whose favourite colour is pink.
