Rebecca Creek Distillers had the opportunity to age their bourbon for up to four years in new Spanish Oak barrels in the attempt to produce a bourbon whose taste and colour resembled whiskey that was twice its age. The whiskey was then aged for a further two years in second-fill American Oak barrels to complete the unique, dual-aged maturation process. The mashbill for this whiskey is: 75% Corn, 21% Rye and 4% Malted Barley and it is bottled at true cask strength.

Aged in new Spanish Oak barrels as a rare approach to age their bourbon for 4 years before blending it with a 5-year-old whiskey aged in American Oak. Hints of corn and warm pecans, smooth and rich, with a subtle sweet pecan finish.

Vineyard notes: "Our new “Red Wine of the World,” this red blend is sourced from famed regions of southern Australia, the Barossa Valley and McLaren Vale. Consisting of Grenache, Shiraz and Mataro with a small amount of Cabernet Sauvignon."

Winemaker Notes: This Malbec is crafted from grapes grown in the Andes Mountains of Argentina. After harvest, the grapes are chilled and transported by sea to Caymus, where our unique winemaking techniques produce a wine that is dense, dark, and supple. Red Schooner wines are identified by the voyage number rather than a vintage date, with Voyage 12 corresponding to the 2022 vintage. The result is a remarkably smooth wine, offering aromas and flavors of dark fruit complemented by fine, textural tannins.

Finished in Lustau oloroso sherry butts, look for an amber hue and a rich aroma that suggests dried figs and dates. The palate benefits from a splash of water, which coaxes cocoa and prune notes, winding into a warming finish with cinnamon and clove heat.

Made from a mash of malted and unmalted barley and then triple distilled in copper pot stills, Redbreast 12 boasts the flavour complexity and distinctive qualities of Pot Still whiskey. Matured in a combination of Bourbon seasoned American Oak barrels and Oloroso Sherry seasoned Spanish oak butts, the distinctive Redbreast sherry style is a joy to behold in each and every bottle.

Honey, vanilla, peppercorn, Golden Delicious apples, macadamia nut, green banana, and clove-spiked orange. The flavors are bright with green apple, banana, vanilla, and citrus, developing a delicious creaminess to support the pot still spices. The creaminess really crowns this older whiskey as something special, with the bourbon wood playing a greater role than in younger, jammier Redbreasts. The finish is wonderfully long and warming, with spice, tangy orange, and oak.

This new permanent addition to the Redbreast range is partially matured in ruby port casks, which have helped the vitality and the complexity of the finished whiskey while still delivering a remarkable intensity of red berry fruit. Orange peel, pine cone, vanilla, and walnut on the nose. Raspberry, cherry, plums, and active spices like a wildfire across the tongue, with pepper and chile heightened by the strength and menthol late on the finish.

This 100% Pinot Noir was aged for a minimum of five years before disgorging. A rich, generous Blanc de Noir with a fine mousse, vibrant acidity, and pleasant aromas of quince, roasted cashews, pie crust, and vanilla cream.

Nose: Fresh citrus, green apple, and floral aromas.
Taste: Crisp acidity, lemon zest, pear, and mineral notes.
Palate: Delicate bubbles, vibrant acidity, and a long, refreshing finish.

This deep garnet wine has a nose of black cherry, coffee bean and black olive. Spicy on the palate, it offers flavors of licorice, anisette and eucalyptus that register more strongly at first than pomegranate and raspberry. These specially selected eaux-de-vie are aged in Limousin oak casks called tierçons and expertly blended to create our signature cognac. Each drop of LOUIS XIII cognac represents decades of craftsmanship and know-how, meticulously overseen by generations of Cellar Masters, ensuring a unique taste of time that will endure for centuries. Cognac is a type of brandy made from white grapes grown in the Cognac region and double distilled in copper pot stills. Rémy Martin is known for its high-quality cognacs, which are made from a blend of eaux-de-vie (a type of brandy) aged for at least two and a half years. The company produces a range of cognacs, including Rémy Martin VSOP (Very Superior Old Pale), Rémy Martin XO (Extra Old), and Rémy Martin Louis XIII, which is a blend of more than 1,200 eaux-de-vie aged for an average of 40 years. Renato Ratti Barolo DOCG Marcenasco is a classic expression of the Nebbiolo grape grown in the Barolo subregion of Piedmont, Italy. This wine offers aromas of ripe red fruit, violet, licorice, and tobacco, with a touch of leather and earth. On the palate, it is full-bodied and complex, with fine tannins and a long finish. This wine can be cellared for up to 20 years, but it is also enjoyable now! 
Pairs well with: a hearty meat dish or aged cheese.
