SHIN Select Reserve Whisky is blended with 2 years finished whisky of ex-bourbon and ex-sherry, that are both previously aged in Japanese Shochu cask (American Oak) for 3 years.

Tasting Notes

Nose: cereal barley malt, some caramelised sugar and light treacle, hints of vanilla custard and crème brulee, fruity apples and pears, toffee and caramel

Palate: light and smooth initially, creamy caramelised sugar, caramel, fudge, toffee, vanilla, some spices begin to develop, a light wasabi heat and a little fennel give this a spiced kick

Finish: medium, balanced between creamy vanilla toffee and drying spiced oak and hints of peat

Bright golden appearance shot through with amber highlights. A delightfully refined Rivesaltes with a classy bouquet of soft caramel, stewed apples, pears, nuts and an overriding impression of completeness. Round and elegant on the palate, with a Margaux like understated sophistication. Unmistakeable rancio characters help to place this in a blind tasting, but this is preceeded by impressions of butterscotch, walnut fudge, soft brown sugar and a little treacle. Very gentle on the long length with a pleasing warmth that lingers long after the wine has disappeared.

The nose is delicate, mingling rhubarb and peach fragrances with delicious notes of white flowers. A fresh attack with notes of rhubarb gives way to an alluring, delicious and pure mouthfeel. Persistent and smooth, the finish reveals buttery and subtle aromas of Muscadelle.

Light and fun, this pineapple wine is sweet, yet finishes with nice acidity and fruity freshness. Bursting with tropical flavors, this wine is fruit-forward and fun. A splash of Hawaii in every glass.

Dominio de Pingus is a cult classic in Ribera del Duero, established in 1995. The flagship Pingus has been established as one of the world's best wines and always scores very high. The vine age is very old and never treated with herbicides or pesticides. The PSI or "baby" of the three that are made is named after the 23rd letter of the Greek alphabet. Made with Tinto Fino (what tempranillo is called here), this vintage has 10% garnacha for added juiciness and freshness. Always fine grain an silky tannins, the creamy mouthfeel will make another sip necessary. A great introduction to the wines of Pingus.

Cenote Tequila Reposado is a premium tequila that is aged for up to 11 months in American oak barrels. This process gives the tequila a smooth and complex flavor profile with notes of vanilla, caramel, and oak. The tequila is made from 100% blue weber agave, which is grown in the highlands of Jalisco, Mexico. The agave is slow-cooked in traditional brick ovens and then fermented with natural yeast before being distilled twice. Cenote Tequila Reposado is a versatile spirit that can be enjoyed neat, on the rocks, or in a variety of cocktails. Its smooth and rich taste makes it a popular choice among tequila enthusiasts and connoisseurs alike.

Chiaretto is the term used for rosati crafted by the shores of Lake Garda. The Gorgo winery practices oraganic winemaking and this fresh and vibrant wine made from the Valpolicella grapes of Corvina, Rondinella and Molinara offers aromas of strawberry, raspberry and peach. The palate has high acidity balanced nicely with the small red berries, red apples and peaches.

From the Bolgheri DOC, the Poggio Al Tesoro is owned by the Allegrini family of Valpolicella fame. Named after the Seggio river that crosses the vineyard, it is a blend of 50% Merlot, 20% Cabernet Sauvignon 20% Cabernet Franc and 10% Petit Verdot. The nose exhibits lovely fresh, crunchy fruit, enriched with mineral and spicy notes. The palate is medium bodied with hints of red berries and elegant silky tannins. A great wine for the price point!

With about 19 different Lambrusco names in the family, one of the most common is Salomino. This wine is made from Lambrusco Salomino for the tannins, roundess and black fruit it also has a touch of Sorbara, for freshness and acidity. A perfect pairing with parmigiano cheese drizzled with Balsamic vinegar, Tagliatelle with Bolognese or Gnoccho Fritto, the local dish of deep fried bread with prosciutto.

Located in Calabria, the toe of Italy's boot, Cirò is the only DOC of the region for red wines, it is made from 100% Gaglioppo. Juicy and vibrant, it exudes aromas of small red berries, citrus zest, and earthy underbrush notes with a hint of minerality. Ready to drink and enjoy with your barbecued burgers this summer!

Nebbiolo is known as Chiavennascain Lombardia and it is so elegant, perfumey, and graceful, you might not want to go back to drinking Barolo! ArPePe is an iconic producer in this region and their Grumello is a subzone of the quality Valtellina region. At 10 years old, this wine is gorgeous. 

Tenuta Scuotto's Greco di Tufo DOCG is a crisp and refreshing white wine with a bright straw yellow colour. The nose is intense and floral, with notes of white peach, yellow apple, and acacia flowers. It is fresh and lively on the palate, with a mineral backbone and ripe stone fruit and citrus flavours. The wine is well-structured with a balanced acidity, making it an excellent pairing for seafood dishes, grilled vegetables, and light pasta dishes. The grapes are handpicked and fermented in stainless steel tanks, with a short maceration period to preserve the wine's delicate aromas and flavours. Overall, this Greco di Tufo represents the Campania region's unique terroir and winemaking traditions.

The story of Maison Jadot began with vines and the purchase of a Premier Cru site in 1826. Three decades later in 1859 the family-owned domaine was completed. Louis Jadot also became contributed to the renown of Burgundy by becoming the first negociant, with a focus on selling these unprecedented wines in the Northern European markets with his descendants following in his footsteps.

The Les Boucherottes vineyard covers 8.5ha and has a deep clay soil that adds a lush quality to the the wines. As such, this is a full-bodied aromatic Pinot Noir that is plump and round with a dense structure. The aromas of raspberry and plum mingle with rosehip, raw cocoa and spice. It is a classic expression of the Louis Jadot style, which emphasizes balance, elegance, and terroir-driven wines.

The Lelarge-Pugeot Extra Brut Millesime 2008 is a sparkling wine made from a blend of Chardonnay (60%) and Pinot Noir (40%) grapes grown in the Vrigny Premier Cru subregion of Champagne. It has a golden color with fine and persistent bubbles and aromas of ripe fruit, citrus, and brioche. On the palate, it is dry, complex, and full-bodied, with flavors of white peach, apricot, toasted almonds, and a hint of honey. The wine has a long and mineral finish, which makes it a great pairing for seafood, white meat, and creamy dishes.

The art of making fine bourbon first took place on the site of the Woodford Reserve Distillery, a National Historic Landmark, in 1812. You get that sense of history. The history of bourbon is the history of Kentucky, is the history of the United States. Woodford Reserve Rye uses a pre-prohibition style ratio of 53% rye in its mash bill to pay homage to history’s original rye whiskeys, making spice and tobacco the dominant note among a sea of fruit, floral, and sweet aromatics, which yields a nice sweetness and overall balance. After all - balanced rye makes a more balanced cocktail.

Nose: Spicy with distinct notes of rye, black pepper, cedar and cassia bark sweetened with a dusting of marzipan. Hints of pear, apple and almond dance in its depths.

Palate: Clove, rye, mint, molasses, sorghum and honey mingle with hints of apple and malt.

Trellised and bush vine Pinotage and Cabernet Sauvignon from the Coastal Region were purposefully grown to produce our high-quality Rosé. With supplemented irrigation, the well-drained vineyards planted in weathered shale soils, produced 12 tons per hectare. Pale rose gold in colour, with a pronounced bouquet of watermelon, raspberry coulis and passion fruit. The palate is dry with a medium acidity, packed with red berry flavours, floral undertones and a crisp citrus tail. De Grendel Rosé is the ideal partner for lighter summer fare such as spicy prawns, Portuguese sardines and salads made with red fruits such as watermelon, raspberries, strawberries and pomegranate. This youthful and vibrant wine is best enjoyed early while still fresh and crisp.

Head winemaker Rob Griffin arrived in the Columbia Valley four decades ago via UC Davis and the Napa Valley and is the longest-practicing winemaker in Washington State. This wine spent 17 months in oak barriques and shows the rewards of both skill and patience. Expect ripe, juicy cherry and plum fruit with subtle smoky shading, and pair with grilled meats.

The wine was made from blending 89% Merlot and 11% Cabernet Franc, reaching 14.5% alcohol and aging in 50% new French oak barrels

Chateau Canon-la-Gaffeliere is a Premier Grand Cru Classe, located in the St. Emilion appellation on the right bank of Bordeaux. Owned by the von Neipperg family, there are links to viticulture here since the 13th century. Canon -la-Gaffeliere is one of only two Bordeaux properties that is Certified Organic. The 2014 is a red blend of 55% Merlot, 37% Cabernet Franc and 8% Cabernet Sauvignon with notes of preserved blackberry, fig and black currant. The palate is medium-bodied with good structure and a spicy finish.

The Champagne Armand de Brignac Rose is crafted with Pinot Noir from old vines, planted in the Montagne de Reims, that produce fruit with powerful flavor intensity. The resulting cuvée features bright, fresh layers of red fruits, complemented by hints of baked pastry aromas.

Kujira Ryukyu Single Grain Whisky 10 years was distilled from 100% premium Indica rice and matured in White Oak Virgin casks for more than 10 years.Nose: Rich and sweet butter with caramel, spices from sapwood like bourbon whisky.

Palate: sweet and buttery, like caramel, roasted wood, liquorice. With an extinguish taste of spice such as cloves and cinnamon.
Finish: bitterness with long finish of spices, that brings back the sweetness

Margaux shows us the elegance and feminine side of Bordeaux. This second label of Chateau Brane Cantenac, a Second Growth of Bordeaux is a blend of 65% Merlot, 32% Cabernet Sauvignon, and 3% Cabernet Franc. Already silky and very promising, it expresses black fruit aromas of blackberry and fleshy cherry mixed with elegant toast, smoke, and vanilla. The tannins are refined and balanced and is absolutely in the drink window.

Clyde May’s Alabama Style Whiskey from Conecuh Ridge Distillery bears the name of the man responsible for the brand, Clyde May. Clyde crafted his first spirits in 1946, but it wasn’t until 2001 that the distilling operation was made legal. The company built its name around this popular “Alabama Style Whiskey”, which according to their website is finished with a hint of apple and is the Official State Spirit of Alabama. Clyde May’s Alabama Style Whiskey is bottled at 85 proof. The mashbill is 55% corn, 30% rye, and 15% barley. The whiskey is aged 6 to 7 years in oak barrels and is finished with a hint of apple.

This unique release of 5 year old single grain has been brought to maturation in ex bourbon barrels & finally finished in ex sherry casks. This single grain whiskey gives you smoothness beyond its 5 years.

More delicate then an irish pot still, it is packed with flavour. The sherry cask finish imparts notes of dried fruits & spice with a touch of citrus.

Bottled in small batches, the bottling strength will vary according to how the characteristics of each batch are portrayed. To be enjoyed over ice or in a classic cocktail, such as an old fashioned.
