Four years’ finishing in Vermont has toned down the sweetness and high notes, emphasizing a complex, leather/dark chocolate/tobacco spectrum instead. Lavender, violets, and ripe red fruit rise over dusty-dry barn boards, blue clay, and dark rye bread. The spicy rye tones glow with white pepper, while hints of astringent barrel oak keep a slight slipperiness from clinging.

It is considered one of the highest quality Baijiu products in the world and is often referred to as the "king of Baijiu".It is made using traditional fermentation and distillation methods, using only high-quality sorghum as the main ingredient. The production process is highly controlled and takes several years to complete, with the liquor being aged in ceramic jars and underground cellars. One of the distinguishing features of Moutai Prince Chiew - Gold is its smooth and complex flavor profile. It has a rich aroma with notes of fruit, grain, and flowers, followed by a velvety and full-bodied taste that is both sweet and slightly spicy. The finish is long and lingering, leaving a pleasant aftertaste.

Mermaid Gin is a hand-crafted, small-batch gin produced by the Isle of Wight Distillery. It is made using 10 botanicals, including locally foraged Boadicea hops, and is distilled using a traditional copper pot still. The gin has a smooth, complex flavor with notes of juniper, coriander, and elderflower, as well as a subtle hint of hops. It has a fresh, floral aroma and a clean, refreshing finish. The name and label design of the gin are inspired by the mythological mermaid, a nod to the gin's coastal origins on the Isle of Wight.

Righetti’s Amarone is produced from selected Corvina (70%), Rondinella (20%) and other indigenous varietals (10%) grown in the hills of the Valpolicella Classico DOC. The finest bunches of ripe grapes are placed in shallow wood crates and left to dry over a period of 3-5 months. Thereafter, the grapes are pressed, the juice is fermented to dryness, and the wine is aged in large casks of Slavonian oak.
Full-bodied and rich with aromas of dried fruit, plums, black cherry and a distinct “earthy” note. The wine will continue to evolve in the bottle over the next 5 to 10 years. What remains is a highly extracted fruit-driven wine that presents with 15.2% Alc.

he flagship expression from Dublin's Teeling, the Small Batch Irish whiskey is made with a blend of malt and grain whiskeys, initially aged in ex-Bourbon barrels. Following that, the Teeling folks moved the whiskey over to casks that had previously held Central American rum! In these casks, the whiskey had an extra rest for up to 12 months, before being bottled at 46% ABV without any chill-filtration. Wonderfully full-flavoured, with plenty of fresh fruit, creamy vanilla and lively spice notes to enjoy!

The Charles Heidsieck Brut 2012 is a vintage champagne made by one of the oldest and most prestigious houses in Champagne. Made from a blend of 60% Pinot Noir and 40% Chardonnay grapes sourced from some of the best vineyards in the region, the wine is aged for over 8 years in the cellars of Charles Heidsieck to develop complexity and richness.

On the nose, it has notes of toasted brioche, ripe apple, pear, and white flowers. On the palate, it is a full-bodied wine with a creamy texture and flavors of citrus, baked apple, and a touch of honey, along with a subtle hint of mineral. The wine has a long and elegant finish that leaves a pleasant aftertaste.

The Vecchia Modena Premium Lambrusco di Sorbara represents the history both of the Chiarli wine Company and of Lambrusco wine itself. The bottle and label are reproductions of an 1892 bottlethe oldest existing bottle containing Lambruscothat is still treasured in the Chiarli archives today. Chiarli Vecchia Modena won the first international recognition by a Lambrusco wine at the World Expo in Paris in 1900. Reintroduced in 2002 at a brand-new Cleto Chiarli winery, the wine is made through a single fermentation under pressure, rather than the normal two-fermentation process of almost all other sparkling wines. This is in the brut range, with minimal detectable sweetness.

Tasting Notes:
Vital Stats: 43% ABV. Distilled in 2006 and bottled in 2021. Double matured in American oak and ex-oloroso casks.
Appearance: This is a light straw color. It forms a thick rim on the glass that takes a long time to form into tears.
Nose: This has the smell of a honeysuckle tree, whole oranges, and a bit of lemon oil. There is just a hint of the grain on the nose as well.

Palate: This is like drinking honey water. It is light and delicate while being full of flavor. It is certainly on the sweet side with notes of honey and star fruit. There is a brief note of cherry on the mid palate. The front and mid palate are quite clean while the finish has a bit of that sulfur taste. The finish is complemented by a light earthy spice, reminiscent of white pepper and allspice. The addition of water sees the sweetness subdued and all the flavors other than the honey are present for longer. There is just a bit of malt that wasn't there straight out of the bottle as well.

Colour: Deep crimson.

Aroma: An intense aroma of ripe Satsuma plum, mocha, vanilla and savoury notes combine with hints of cedar and sweet spices.

Palate: Rich, sweet fruit is balanced wonderfully with briary and sweet spices and lovely, silky tannins. A full-bodied, textural wine, showing great complexity with hints of cedar and allspice flowing through to the lengthy, brambly fruit finish.

Garnet red veering towards purple. Expressive, with creamy notes of black fruits such as blackcurrant, blackberry, blueberry and sweet spices. Slender in the mouth, prolonged by a fine acidity, but wrapped up in a round, velvety and charming matter. Combines blackberry cream with toasted spices and vanilla. The finish is tonic, with a substance that gains in concentration and tannins. Harmonious, coherent, well balanced.

On the palate, juicy blueberry, raspberry and pomegranate flavors meld with creamy oak to create a generous palate structure, with focused tannins and hints of sage and savory spice adding complexity to a long, stately finish.

Michter's has reintroduced a once-popular whiskey into their lineup, showcasing the traditional sour mash method where a portion of the fermented mash from one batch initiates the fermentation of the next.
