PALATE
Enters the palate with cinnamon and toasted caramel flavours. As the liquid fills the mouth with pleasant bitter and liquorice notes, the finish fades into lasting flavours of chocolate and sweet herbs.

This whisky is matured in re-charred red wine casks, oloroso sherry butts, and bourbon barrels. After maturation, a few drops of water are added to achieve a batch strength of 57% abv. The result is a monumental dram that marries Kilchoman's natural peat smoke and citrus character with notes of dark fruits, rich spices, and salted caramel sweetness.

Lismore 15 Year is a sherried single malt Scotch whisky sourced from a distinguished Speyside distillery, known for its Red doors and owned by independent bottler William Lundie & Co. It presents enticing aromas of salty roasted nuts, apricot marmalade, and floral honey on the nose. The palate offers a dry, fruity experience with notes of raisin toast, brown sugar, Creme Brûlée, and Christmas spice, all wrapped in a medium-to-full body. Our most highly awarded tequila, Hornitos Black Barrel starts as a premium Añejo, then spends four months in deeply charred oak barrels to give it rich, smoky flavor and a golden amber color. It spends an additional two months in specially toasted barrels for more depth and complexity and a bold taste that embodies the Hornitos spirit.

This whiskey exudes sumptuously rich and intense flavors, drawn from its double-charred casks. It offers a seductive blend of butterscotch, treacle, toasted nuts, scorched coconut, raisin, and vanilla essence. With a deep-centered sweetness, it unveils notes of caramelized sugar, dark vanilla, pecan nut slice, crème brûlée, peppery spice, and fleshy fruits immersed in sticky, umber syrups. Its long, satisfying, toasted aftertaste is characterized by prominent flavors of vanilla and raisins, leaving a lasting impression.

The fourth release in Glenfiddich’s Experimental Series, this expression comprises peated and unpeated single malt, matured in bourbon barrels and then finished for 3 months in Latin American rum casks. A nose of spiced rum, vanilla, ripe pears, and pipe tobacco. Baked apple, sweet oak, and cinder toffee on the palate, with ashy smoke. Terminado is a unique blend that marries Smokehead Islay single malt with tequila, resulting in an unprecedented and captivating whisky experience. The combination of the fiery peat of Islay whisky with the distinct flavors of tequila cask finishing creates a mesmerizing interplay of smoke, agave, sweetness, and citrus. This unconventional union produces a whisky that is bold, complex, and utterly distinctive, offering a taste sensation unlike any other.

Aged for twelve years in Pedro Ximenez and Oloroso sherry casks, this whisky presents a deep amber hue with captivating red highlights. Enticing aromas of sweet vanilla, figs, and a subtle hint of ginger mingle with enticing sherry notes. On the palate, it offers a luxurious and velvety-smooth texture, unveiling rich oak, sweet sherry, and succulent raisin flavors. The finish is medium in length, leaving a lingering, spicy sensation that tantalizes the senses.

Matured in first-fill sherry and bourbon casks as well as refill casks. Marvelously rustic on the nose, with aromas of dried forest leaves and bramble, lemon, vanilla, peach, and light sherry soapiness. Honeyed texture and flavor on the palate, pleasantly bright with honey, lemon tea, apricot and peach tart, which continues to a smooth and honeyed finish with notes of cinnamon, marmalade, and sliced orange. Delicious, straightforward, and enjoyable.

Coca-Cola, rich spice, dark chocolate, roasted walnuts, licorice root, maple syrup, Luxardo cherries, and varnish on the nose. Without water, the palate is chewy and full of puckering tannins; add a few drops to unleash dark chocolate, candied ginger, cooked berries, tea leaf, walnuts in maple syrup, black pepper, and a hint of orange oil. The lengthy finish offers chocolate-covered cherries, black tea leaves, and white pepper. Layered and engaging.

The nosing passes find lightly toasted malt notes along with wood, sawdust, distant mint, and light caramel—not the most expressive Highland Park bouquet. The palate entry highlights the maltiness; at midpalate the taste becomes sweeter and honey like complementing the grain/malt base. Finishes assertively with the spirit underlining the honeyed sweetness.

It’s a brave person who tries to persuade a malt like Lagavulin to go into a different direction. Indeed, even PX casks, from the sweetest fortified wine of all, can’t fully obscure the distillery’s character, just give it a raisined coating. The creosote turns to tar and licorice, while there’s Syrah-like sootiness, and damson. This release is slightly less sweet than in the past and is the better for it, though I still prefer my Lagavulin relatively ‘naked.’

Tomoe Gozen, a legendary female samurai from 13th century Japan, who led troops into battle armed with a naginata and kaiken, lends her name to a Japanese whisky crafted at the Yamanashi Prefecture Distillery. Aged for 8 years in Mizunara oak barrels, this whisky combines grain and malt whisky to create a profile characterized by warm, fruity, and vanilla notes, complemented by hints of oak, red apple, coconut, and marzipan flavors. The experience culminates in a medium-length finish, embodying the spirit of this revered warrior.

Founded in 1832, the Maison Castarède elaborates and for more than 190 years of life in the Pure Gascon tradition. Whether initially in the cellars located in Pont de Bordes or on the property of the Château de Maniban, the Castarède family loves this ancestral know-how with love. This 1993 vintage low-armagnac is, once distilled, raised in oak barrels until it is borrowed on the counter label.
