Rebecca Creek Distillers had the opportunity to age their bourbon for up to four years in new Spanish Oak barrels in the attempt to produce a bourbon whose taste and colour resembled whiskey that was twice its age. The whiskey was then aged for a further two years in second-fill American Oak barrels to complete the unique, dual-aged maturation process. The mashbill for this whiskey is: 75% Corn, 21% Rye and 4% Malted Barley and it is bottled at true cask strength.

George Remus Highest Rye 6 Year Straight Bourbon takes the rye content to its legal limits, resulting in a bourbon that pays homage to the rye trend preceding Prohibition. Aged for six years, this bourbon presents an enchanting fusion of sweet, rich fruit, and maple on the nose.

The Vinum Cellars Red Dirt Red begins with a pleasing aroma of red cherry, cranberry and baking spice. The wine tastes of plum and cherry and features lots of earthy, meaty and mineral notes along with touches of balsamic and black olive plus more baking spice. Smoky, almost mesquite like notes lead into the long dry finish. With plenty of complexity and lots of layers to discover, this is an excellent choice. The addition of Petite Sirah (which actually originated in the Rhone but isn't grown there today) works quite well with the GSM.

A left-bank Bordeaux blend that comprises 64% Cabernet Sauvignon, 14% Cabernet Franc, 14% Petit Verdot and 8% Merlot, this Cabernet-dominant blend could be placed from the Washington Rocks area in a blind tasting fairly easily. It is terroir-driven, expressive on the nose, gorgeous on the palate and downright delicious. Let's start with the nose - imagine aromas of black plum, wild black currant, unsweetened chocolate, espresso powder, sweet toasted cinnamon and just a touch of cedar bark.

After spending 9 years in American oak, the spirit was further matured in French oak barrels that previously held Napa Valley Bordeaux varietal red wine which added perfumed aromatics and rounded out the mouthfeel. The spirit was then tamed with pristine wine country water. Nose: Intense and inviting with caramelized sugar, baking spices, dark fruits, butterscotch and vanilla notes.

Bib & Tucker Double Char 6-Year-Old is a robust Tennessee straight bourbon aged for six years in new white American oak, followed by a minimum of five months in a second heavily charred barrel. Finished with sugar maple smoke, this innovative method yields a complex, smoky, and sweet profile.

Rabbit Hole Heigold is a high-rye Kentucky straight bourbon whiskey featuring a distinct mash bill of 70% corn, 25% malted German rye, and 5% malted barley. Bottled at 95 proof, it is recognized for a sweet, creamy palate featuring notes of butterscotch, citrus, and toasted spices.

The 2023 Screaming Eagle Cabernet Sauvignon is characterized as a profoundly elegant, aromatic, and mineral-driven wine, showing notes of crème de cassis, liquid violets, graphite, and cedar. It features a silky yet powerful structure with polished tannins and immense longevity, often deemed a high-investment, "cult" Napa Valley wine.

Trail’s End 8-Year Apple Brandy Finished Bourbon is a Kentucky straight bourbon aged for eight years in new charred American oak barrels before being finished in Apple Brandy casks from Clear Creek Distillery in Oregon. Columbia Crest's H3 Cabernet Sauvignon is a Washington State wine known for its bold, fruit-forward profile and smooth, approachable style. JUSTIN Isosceles is a premier Bordeaux-style blend from Paso Robles, characterized by a deep ruby color and a complex, full-bodied profile. Blue Canyon Estate Grown (Eg) Pinot Noir, primarily from Monterey/Arroyo Seco, is a medium-bodied, value-driven California wine. This is a surprisingly thin wine from this classic vineyard and stellar vintage. Flavors of strawberry, watermelon and cranberry seem dilute, and there is little backup as the wine trails out the finish.
