Pearse Lyons Distillery opened in 2017, becoming Dublin’s second working distillery this century. This single malt has a nose of honey, apple pie with cream, light pepper, dried grasses, and green herbal notes. The orchard fruits of apple and pear are silenced by a fury of pepper, root ginger, and clove, with only grapefruit peel proffered in response. The dry, banana chip finish fades in a melee of squabbling spices.

Nose: Rich and smoky with notes of peat, charred oak, and a hint of sea salt. Aromas of dark chocolate, dried fruits, and sweet Pedro Ximenez sherry emerge, adding depth and complexity.

Taste: Intense and robust, the palate delivers a burst of peat smoke, accompanied by flavors of roasted nuts, caramelized sugar, and dried figs. The influence of the Pedro Ximenez sherry cask is evident, bringing a luscious sweetness and a touch of dark fruitiness.

Adelphi presents this bottling of 2015 vintage Welsh whisky from the lovely Penderyn Distillery. It was aged for 8 years in a single cask which filled 247 bottles at 56.9% ABV. This single malt is presented without chill-filtration and with its natural colour.

Nose: Sweet prunes, dried fruits and raisins; sponge cake with hot chocolate sauce, a hint of coffee and honey aromas. Taste: Sweet liquorice, dark berries, jam and candied fruits, juicy apricots, caramel with roasted coffee beans with some sweet spice. Finish: Sweet sherry notes, dried fruits with a hint of oak.

The ninth installment in the Penderyn Icons of Wales series, aptly named 'The Headliner' in honour of David Lloyd George (1863-1945), the sole Welsh Prime Minister and architect of the Immature Spirits Act 1915, mandating a minimum three-year maturation period for whisky. On the nose, expect subtle hints of red berries, strawberries and cream, complemented by a touch of cranberries, light oak, and vanilla. The palate offers a rich and sweet experience, with flavors of dried fruits, salted caramel, floral honey, and a spicy note of black pepper, leading to a tannin-driven dry finish.

The Penderyn Madeira Finish has a light golden colour and a nose of citrus, honey, and oak. The flavour is sweet and fruity, with notes of orange, lemon, and honey. The finish is long and lingering, with a touch of spice.

Myth is a single malt whisky matured in a range of specially selected ex-bourbon and rejuvenated oak casks, bottled at 41% abv. This whisky has a Kosher certificate.

Nose: Fresh and lively, Myth has mixed citrus fruits mingling with apple, pear drops and the merest hint of tropical fruits

Palate: Sweetness dominates then moves over to allow some refreshing bitterness to emerge while the mixed fruits continue to dominate the flavour

Finish: Gradually all the flavours ebb away to leave memories of a lively and light style of whisky that is easy to drink

Rhiannon is the 7th chapter in Penderyn's Icons of Wales Series. Finished in sherry wood, the whisky is named after Rhiannon, an enchantress and horse goddess who could outrun any pursuer while riding slowly. Rhiannon in Welsh means 'Great Queen' or 'Divine Queen.'

On the nose, soft notes of raspberries and strawberry liqueur, as well as some melted butter, cassis, and candy canes. Hints of peanut skins and pastries. Needless to say, it is very sweet. The taste has more sweetness on arrival and is pretty much a continuation of the nose. Plenty of berries, but also some caramel sweetness. The wood has also infused some spiciness. The finish has a lingering sweetness and is somewhat drying.

This addition to the Port Askaig range is presented with natural color, without chill filtration, and matured in refill American oak casks. The nose presents light peat, ozone, and faint medicinal notes, becoming saltier and spicier with time. Bracing. Woodsmoke, kippers, grapefruit, and lime on the palate. The finish is sweet, with receding smoke.

This premium bourbon undergoes a unique aging process, starting in alligator char barrels before resting in Pedro Ximenez sherry casks. Rebecca Creek Distillers had the opportunity to age their bourbon for up to four years in new Spanish Oak barrels in the attempt to produce a bourbon whose taste and colour resembled whiskey that was twice its age. The whiskey was then aged for a further two years in second-fill American Oak barrels to complete the unique, dual-aged maturation process. The mashbill for this whiskey is: 75% Corn, 21% Rye and 4% Malted Barley and it is bottled at true cask strength.

Aged in new Spanish Oak barrels as a rare approach to age their bourbon for 4 years before blending it with a 5-year-old whiskey aged in American Oak. Hints of corn and warm pecans, smooth and rich, with a subtle sweet pecan finish.

Finished in Lustau oloroso sherry butts, look for an amber hue and a rich aroma that suggests dried figs and dates. The palate benefits from a splash of water, which coaxes cocoa and prune notes, winding into a warming finish with cinnamon and clove heat.

Honey, vanilla, peppercorn, Golden Delicious apples, macadamia nut, green banana, and clove-spiked orange. The flavors are bright with green apple, banana, vanilla, and citrus, developing a delicious creaminess to support the pot still spices. The creaminess really crowns this older whiskey as something special, with the bourbon wood playing a greater role than in younger, jammier Redbreasts. The finish is wonderfully long and warming, with spice, tangy orange, and oak.

This new permanent addition to the Redbreast range is partially matured in ruby port casks, which have helped the vitality and the complexity of the finished whiskey while still delivering a remarkable intensity of red berry fruit. Orange peel, pine cone, vanilla, and walnut on the nose. Raspberry, cherry, plums, and active spices like a wildfire across the tongue, with pepper and chile heightened by the strength and menthol late on the finish.

As part of its program to make available single malts from all five of its Scotch whisky distilleries, Bacardi subsidiary John Dewar & Sons has now released a trio of bottlings from Royal Brackla, situated near Nairn in the Scottish Highlands. The 12, 16, and 21 year old expressions are initially available in ten markets, Including the UK, U.S., and Canada. The nose offers warm spices, walnuts, malt, peaches in cream, honey, vanilla, and a slightly herbal, earthy note. Quite robust on the palate for its strength, with spice, sweet sherry, and mildly smoky orchard fruit. The finish is relatively long, with cocoa powder, citrus fruit, and ginger.

A new NAS expression from Scapa on Orkney, matured entirely in first-fill American oak casks. An initial hint of lime cordial, then musty peaches, almonds, cinnamon, and table salt. More peaches on the palate, with tinned pear and a little honey. Tingling spices in the drying finish, which soon becomes quite bitter – detracting from the overall balance.
