This comes from a selection of vineyards on very stony, chalky soils. With 20% whole clusters in the fermentation and 20 months in casks, this wine is mute on the nose—it has nothing at all to say, but the palate sure does. It's extremely fruity and rich in acidity and freshness. The austerity is what defines the tannic structure here—a skeleton of tannins like a tense, steel network. A wine that goes far beyond the variety to speak of the place. A mountain wine.

This is really excellent with creamy tannins and a lovely berry, currant and blueberry character. Full and luscious for the vintage. Superb. Second wine of Ausone.

The vineyard of Vosne-Romanée covers about 240 ha on Vosne-Romanée and Flagey-Echezeaux. The village of Vosne-Romanée, situated at the heart of the Côte de Nuits, is comprised of six fabulous Grands Crus such as Romanée-Conti, Tâche, Richebourg… whereas its neighbor, Flagey-Echezeaux, shelters Echezeaux and Grands-Echezeaux. The production of Grands Crus represents ¼ of the vineyard. Les Echezeaux itself covers only 34.8 hectares, at an altitude varying between 230 and 300 meters above sea level, with a rather complex mixture of soils: limestone, red silt, marl…

Grgich Hills Estate Cabernet Sauvignon is a premium, sustainably-farmed Napa Valley red, known for a balanced, "Old World" style (similar to 1980s Napa cabs) rather than overly jammy profiles. It features bright acidity, velvety tannins, and complex notes of dark fruit (black cherry, blackberry), herbs, cedar, and earth.

One of the great vineyards of Napa Valley, farmer Nathan Fay planted this in 1961. It was the first vineyard planted to Cabernet Sauvignon in the Stags' Leap District. Stag's Leap cellars purchased the vineyard in 1986 and it continues to be one of the signature wines of the lineup, garnering 90+ scores year after year. The 2019 shows dust, clove and graphite with secondary hints of violet, sage and tree bark. While this can be enjoyed now, it is recommended to cellar and enjoy from 2029-2039. This vintage scored a perfect 100 points with Wine Enthusiast

The S.L.V. Cabernet Sauvignon is rich and complex with aromas of currants, violets, and dusty cocoa powder. Generous dark fruit flavors dominate the palate and meld with hints of graphite. The tannins are structured but have a soft edge, and the Napa Cabernet finishes with a dark chocolate note.

One of the original producers that grows Trebbiano Abruzzese, one of the few quality grapes of the Trebbiano group. There is not much of this exported and even fewer bottles of the Montepulciano. Francesco Valentini and his son are the only humans allowed in the cellar as Francesco never wants to introduce foreign microbes or yeasts to interfere with the ageing of the wine. These are some of the most ageable white wines in the world and in fact, could be considered “unicorns” as they are hard to find here in Canada.  Truly collectible.

Along with the 2018 already in house, the 2019 has since arrived and now is the time to pick up a mini vertical of these wines. Highly sought after and with a cult following, these wines are rare. This is a complex and opulent wine, which has become famous for its incredible longevity. The nose is full of ripe yellow fruits and white flowers. The palate is rich, warm and well balanced with beautiful acidity and sapidity.

A 2008-vintage Champagne from Bruno Paillard's Nec Plus Ultra range, a collection of Champagnes from only the best vintages. Made with a blend of 50% Chardonnay and 50% Pinot Noir grapes from Grand Cru vineyards, aromas of redcurrants, wild strawberries, raspberries, cherries, ginger, honeysuckle and quince appear on the nose and are echoed throughout the palate. Try enjoying this Champagne as an aperitif, or accompanied by langoustine, saffron risotto or quail.

The 2008 vintage of Roberto Voerzio La Serra Barolo is known for its complex aroma, with scents of rose petals, dried cherries, leather, and spices. On the palate, the wine is full-bodied and rich, with flavors of ripe red fruit, licorice, and tobacco, balanced by firm tannins and good acidity. The wine is typically aged for several years in oak barrels before release, which contributes to its structure and complexity.

Domaine Harmand -Geoffroy is a family owned winery dating back to the 19th century. The family owns 22ha of vineyards in the prestigious Gevrey-Chambertin appellation. Most of the vines are over 50-years old, some reaching 85 years. The Lavaux St. Jacques is a Premier Cru vineyard located just west of the village of Gevrey-Chambertin. This 9.5ha vineyard is planted entirely to Pinot Noir and is considered to be one of the best Premier Cru in the region. The resulting wines are rich and lush. Matured in 50% new oak, this 100% pinot noir shows mineral intensity with spicy black fruit overlaying an earthy core. This powerful wine needs time to reveal its inner layers, but an underlying sense of freshness promises that this wine will age for decades.

The truly exceptional 2018 vintage of Viñedo Chadwick displays an intense ruby red colour with violet shimmer. Elegant, fresh and linear entry on the nose, with aromas of cherry, cassis, raspberry and delicate notes of blueberry pie. The palate shows red fruit and blackberry, all framed by soft tones of bitter chocolate and some cedar, subtly filled by very fine-grained and silky tannins. The Premier Cru of Les Epenots is one of Pommard's best known names, referring to thethree climats of Les Grands Epenots, Les Petits Epenot and Clos des Epeneaux. These wines can be labelled under these individual names or as "Epenots". All vineyards are planted to Pinot Noir and are considered some of the best -rich and structured with spicy, earthy overtones and considerable elegance. The Parent Les Epenotsis 100% Pinot Noir and very expressive and complex with violet and red fruit aromas of cherry raspberry. The mouth is fleshy and concentrated, and the tannins are fine, velvety, and elegant.

Ben Nevis Distillery is a distillery in Scotland that is located at Lochy Bridge in Fort William and sits just at the base of Ben Nevis, the highest mountain in the British Isles, which rises to 4,409 feet above sea level. A coastal distillery in the Western Highlands, Ben Nevis draws its water from the Allt a'Mhuilinn which originates from two pools, Coire Leis and Coire na'Ciste. Founded in 1825 as an independent enterprise, it has been owned by Nikka Whisky Distilling of Tokyo, Japan, since 1989.

Mature plum, vanilla, toast and toasted oak sensations lead the nose. The palate opens with juicy black cherry and plum layered with coffee, dense chocolate and bitter espresso that slightly diminish the impact of its Nebbiolo pedigree and purity. Johnnie Walker Blue Label Ice Chalet offers a distinctive tasting experience with notes of sweet vanilla, spiced apples, and plums, along with a subtle smoky finish. The palate features apples, berries, and spices, accompanied by soft wood, gentle smoke, and rich orchard fruit. The finish is characterized by soft fruity spice and a gentle smoke.

The nose is a light lunch on a rocky beach, where the dusty stones contrast with the sanguinity of bresaola and the richness of sweet chili jam. The jam spreads onto the palate, but the meatiness doesn't go anywhere either, before a crackle of black pepper sets up a lingering finish.

DOMAINE TORTOCHOT GEVREY 1ER CRU CHAMPEAUX exhibits complexity married perfectly with elegance, the wine is full-bodied and this comes very much to the fore. There is a fruitiness together with touches of flowers - roses and wallflower. This wine may be kept and be allowed to mature for some years.

Tasting Note
Delicate golden color with soft green glints. Intense nose with tremendous aromatic richness. Initial notes of citrus zest are followed by lemon tart, and then toasted notes reminiscent of freshly baked brioche. The palate offers mandarin zest and candied orange, enlivened by a touch of star anise which underscores the wine's aromatic freshness. Dense and rich, the palate has good length with a pleasant hint of bitterness on the finish.
It is only in Sauternes that botrytis can develop, giving Rieussec its unique richness. This noble rot meets our grapes to create a delicate osmosis that we reveal by harvesting each grape at the ideal moment. Once bottled, our wine starts its life cycle, drinkable from the earliest stage to the longest aging potential: when kept chilled once opened, it can be enjoyed for several weeks without deteriorating and can match a thousand flavors and occasions from noon to midnight.

The Les Argilieres vineyard is 4ha and very well located, but much less known than its other Premier Cru neighbours. Wines from this plot are powerful, rich and rustic. Plump raspberry fruit, spicy with strict structure and tannins.

The Groffier family is a longstanding name in the Cotes du Nuit. Their family can be dated back to the 1800's, but it was grandfather Robert who started bottling wines at the Domaine. Two generations later, Nicholas Groffier has taken over elevating the wines to an unprecented level yet still maintaining the traditions learned from both his father and grandfather. Although their cellars are located in Morey-St.-Denis, they own no vineyards there, rather 0.8ha in other appellations, most notably Bonnes Mares, and one full hectare in the Chambolle Musigny Les Amoureuses, making them the largest land owner of the area. This 100% pinot noir is a muscular wine with black cherry and blackberry aromas. The palate is full-bodied with a serious tannic grip around the iron, tobacco and earthy notes. This has great ageability on it, put this one away to let it mellow.

The Lenoble Les Aventures Blanc de Blancs is a sparkling wine made from 100% Chardonnay grapes grown in the Chouilly Grand Cru subregion of the Champagne wine region in France. It has a pale yellow color with greenish reflections and aromas of citrus, white flowers, and brioche. On the palate, it is dry, crisp, and elegant, with flavors of lemon, apple, and minerality. The wine has a fine and persistent mousse, which contributes to its creamy texture and long finish. The Lenoble Les Aventures Blanc de Blancs is a well-balanced and refined Champagne that showcases the purity and complexity of Chardonnay grapes from the Chouilly Grand Cru terroir. It is an excellent aperitif wine and pairs well with seafood, white meat, and delicate dishes.

Storm Vrede Pinot Noir is an elegant and expressive South African Pinot Noir from the cool-climate Hemel-en-Aarde Valley. If you're looking for Beaujolais Cru, look no further. Of the 10 Cru, CLS has wines from seven. Rather than sourcing the grapes from all across the Beaujolais region, each individual Cru has their own terroir and soil structure; all made with 100% Gamay with the resulting wines unique and set-apart from each other. This Chiroubles is an example of the new, organic/bio-dynamic philosophy that Arthur and Pierre, 5th generation family winemakers, introduced when they took over the estate in 2011. The grapes are harvested by hand to ensure that only healthy clusters are used. Natural yeasts are used for a spontaneous fermentation, following a partial carbonic maceration.
