Au Pied du Mont Chauve Chassagne-Montrachet Premier Cru Les Clos Saint Jean 2018 is a high-quality white wine produced by Au Pied du Mont Chauve, a small, family-owned winery located in  Chassagne-Montrachet. Made from Chardonnay grapes grown in the Les Clos Saint Jean vineyard, this wine is aged in oak barrels for 12 months, resulting in a rich and complex wine with a beautiful balance between fruit and oak flavors. On the nose, the wine displays aromas of citrus, ripe pear, and white flowers, with hints of vanilla and toast. On the palate, the wine is full-bodied and rich, with a creamy texture and a long, lingering finish. The acidity is well-balanced, providing a nice tension that balances the wine. This is a highly sought-after wine that pairs well with seafood, poultry, and creamy pasta dishes. 

Crafted with elegance and power, Le Carillon De L'Angelus 2016 offers a full-bodied profile with vibrant acidity and layers of dark fruit —an exceptional wine that captures the soul of its vineyard with every sip.

Now benefiting from its own dedicated winery, the 2021 Le Carillon d'Angélus is no longer a "second wine" per se, but rather draws on some 25 hectares of dedicated vineyards, emphasizing Merlot from the cool terroirs of Saint-Christophe-des-Bardes, complemented by holdings in the gravelly Figeac sector and on clay soils near Angélus itself—with anything that doesn't make the cut relegated to the No. 3 d'Angélus. Exhibiting aromas of raspberries, plums, warm spices and nicely integrated new oak, it's medium to full-bodied, supple and polished, with lively acids, refined tannins and a long, penetrating finish. - William Kelley, Wine Advocate

Offering up wild, exotic aromas of blackberries, cloves and Indian spices mingled with notions of rose petal, bruised orchard fruit and cherry pit that evolve rapidly in the glass, the 2021 Pontet-Canet is medium to full-bodied, ample and fleshy, with a layered mid-palate and refined tannins that assert themselves on the firm, saline finish. Always one of the Médoc's most singular, idiosyncratic wines, it will be interesting to see how it performs in bottle.

Chateau Angelus in St. Emilion, Bordeaux's right bank has been in existence since 1782. Now operated by Stephanie de Bouard-Rivoal, who represents the 8th generation of the Bouard de Laforest family. Her goal is to ensure the Angelus name continues to represent excellence and timelessness. The Carillon d'Angelus is the second label of Chateau Angelus, this was first released from the 1987 vintage. This wine is a red blend of 90% Merlot, 5% Cabernet Franc and 5% Cabernet Sauvignon and is highly appreciated for its purity of fruit, velvety tannins and elegant finish. The high content of merlot makes it drinkable earlier in life, but can be aged for the next 8-12 years.

Refill bourbon, American oak, and virgin oak are the woods in question. Technically, they are all American oak, just at different flavor-giving stages of their productive lives. Honey, fresh apricot, floral, and supple barley notes, candied orange, star anise, dried chili, and a touch of aniseed. The Lagavulin 12 Year Old "Fireside Tales" (2024 Special Release) is a natural cask-strength Islay single malt. Matured in a mix of first-fill ex-Bourbon and refill casks, it delivers the distillery's signature bold peat smoke softened by active oak, resulting in an extraordinarily balanced, sweet, and complex profile at 57.4% ABV.

The Bruichladdich Octomore 16.2 is an Islay single malt Scotch whisky celebrated for pushing the limits of peat and cask maturation. Distilled from 100% Scottish Concerto barley peated to an immense 101.4 PPM, it is a 5-year-old cask-strength expression that balances robust, earthy campfire smoke with sweet, dark European wine influences.

Bruichladdich Octomore 16.3 is a super-heavily peated, single-estate Islay single malt that balances massive peat smoke with a complex array of sweet, floral, and maritime notes. “This wine evinces pleasing refinement, with clean fruit and a composed feel on the palate. Aromas of ripe cherry and blackberry come through clearly, complemented by subtle floral hints of violet, along with touches of vanilla and a faint note of eucalyptus leaf. The attack is supple and well–defined, with a slightly austere edge at this stage that should integrate further with barrel ageing (16 months, 35% new oak). There’s an appealing interplay of red and black fruit, giving the mid–palate a vibrant, lifted character, supported by fine, velvety tannins that lend structure without heaviness. Despite the warmth of the vintage, the wine retains a welcome freshness, bringing tension and precision. The finish is harmonious and clean, if not especially long, but it remains elegant and well–balanced overall."

Le Petit Cheval Blanc 2023 is an exceptionally fresh and aromatic white Bordeaux, characterized by a 70% Sauvignon Blanc and 30% Sémillon blend. It features bright, high-tensile notes of linden, lime, Bergamot, white grapefruit zest, and greengage, offering a "piercing" and "crystalline" mouthfeel with subtle oak integration and a long, savory finish.

The 2012 Les Forts de Latour is a highly rated second wine from Château Latour, composed of roughly 75–76% Cabernet Sauvignon, 22% Merlot, and 2% Petit Verdot. It offers an elegant, medium-bodied experience with vibrant notes of blackcurrant, cassis, graphite, and cedar. Known for its precision and fine tannins, this 2012 is a classic Pauillac with strong aging potential (2015–2030+).

Almaviva 2023 is an exceptional, high-scoring Chilean red blend (74% Cabernet Sauvignon, 19% Carménère, 5% Cabernet Franc, 2% Petit Verdot) from Puente Alto, offering remarkable freshness and elegance despite a hot, dry vintage. It features intense ruby color, notes of cassis and tobacco, silky tannins, and a long finish.

Leyrat XO Elite is a single-estate, high-end Cognac from the Fins Bois cru, showcasing a dense, complex, and harmonious profile. Aged over 10 years (often much longer) in Limousin oak, this 40% ABV cognac features a deep gold-amber color, delivering notes of roasted wood, dried fruits, tobacco, and characteristic nutty "rancio" on a long finish.

Le Réviseur XO is an award-winning single-estate Petite Champagne Cognac, produced by Domaines Francis Abécassis. It is known for its high-quality, intense, and aromatic profile, often noted for excellent value for money.

Ben Nevis 1996 is a highly acclaimed, often "tropical" Highland single malt, frequently bottled by independent bottlers, and celebrated for its distinct funk, waxy texture, and exotic fruit notes (mango, passionfruit, papaya). Distilled around 1996, this vintage often displays a complex profile of citrus, mineral, and sweet malt, typically matured in hogsheads or sherry butts.

This wine's elegance and balance were a pleasant surprise, given the warm vintage. The nose starts with chocolate-wrapped berries and dates. Smooth on the palate, this savoury blend is made with 60% Malbec, 30% Cabernet and 10% Syrah. It has plenty of red- and black-fruit flavors followed by dates, cumin, thyme and integrated notes of baking spices. Good acidity elevates the experience.
