Cascahuín Blanco tequila is crafted from carefully selected blue weber tequilana agaves sourced from the valleys area, reflecting the distinct characteristics of the region. The production process begins with the use of a masonry oven for cooking the agaves, followed by the extraction of juices through mills, where water from the own well is incorporated. During fermentation, natural yeasts from the yeast pie are utilized in both masonry and stainless steel fermenters. For distillation, a double distillation process is conducted, first in a stainless steel alembic with a copper coil, followed by a second distillation in a small 350-liter copper still with a copper coil. The tequila then undergoes maturation in spent American oak barrels, previously used for tequila for over 20 years, with a resting period lasting from 6 to 8 months in the barrels.

Cimarrón Tequila Reposado is a distinguished additive-free spirit, crafted solely from fully-mature 100% Blue Weber agave and pure artesian well water, devoid of diffusers or enhancers. Hailing from Atotonilco, Jalisco, it stems from hillside agave grown at 4,620′ elevation, ensuring optimal sugar content. Master Distiller Enrique Fonseca oversees its production, employing a blend of 80% double column-still and 20% pot-still tequila. This reposado variant is aged for 3 to 6 months in American white oak, resulting in a bright, forward flavor. Expect subtle notes of caramel and vanilla on the nose, with an underlying dry earthiness on the palate, culminating in a smooth finish.

This clear and light-bodied mezcal has a faintly smoky aroma and a mildly peppery flavor. A potent, alcoholic finish fades into black pepper.

The Macallan distillery of Speyside was founded in 1824 by Alexander Reid, a barley farmer. It was one of the first distilleries in Scotland to be legally licensed. Made from the finest barley and matured for 15 years in a combination of Sherry seasoned American and European oak; these casks without a doubt, are the single greatest contributor to the distinctive aromas and flavours, not to mention the outstanding quality of this Scotch. The apple takes centre stage in the 15, showing baked apples with butterscotch, marmalade and notes of toffee on the nose with a warm palate of warm apples with raisins with cinnamon, nutmeg and vanilla. The finish lingers with oak and spice.

The El Dorado 12 Year Old Special Reserve Rum is blended from aged stocks (the youngest being no less than 12 years old) from the original Wooden Enmore Coffey still, the original metal Diamond Coffey still, as well as from the ancient Port Mourant double wooden pot still which was used to produce ‘navy’ rum for the English Admiralty. All of the Demerara Rum produced by El Dorado is aged exclusively in American oak (bourbon barrels).

he flagship expression from Dublin's Teeling, the Small Batch Irish whiskey is made with a blend of malt and grain whiskeys, initially aged in ex-Bourbon barrels. Following that, the Teeling folks moved the whiskey over to casks that had previously held Central American rum! In these casks, the whiskey had an extra rest for up to 12 months, before being bottled at 46% ABV without any chill-filtration. Wonderfully full-flavoured, with plenty of fresh fruit, creamy vanilla and lively spice notes to enjoy!

A blended whisky from Suntory's three distilleries: Yamazaki, Hakushu and Chita. Toki has a different composition to another Suntory blend, Hibiki, as its main components are Hakashu single malt and Chita grain whisky. It should work really well in a highball.

Complex flavours of orange, crème brûlée and sweet spice are complimented by floral notes that flow elegantly through the palate to a smooth and lengthy finish. The nose is spicy and peppery with intense aromas of blackberry, dried fig, cigar box, leather, vanilla, and meat, accented by subtle violet notes. The palate is dry and full-bodied with crisp acidity and firm, ripe tannins. It presents a complex mix of paprika, black plum, sundried tomato, blueberry, and leather, leading to a savoury dried sage finish. This wine has lots of character now and will soften over the next 2-3 years. Enjoy it with a seared piece of beef, ratatouille, and hearty polenta.

A blend of 70% Cabernet Sauvignon, 25% Saperavi and 5% Rara Neagra, this garnet colored wine has aromas of baking spices, raspberry, vanilla and black cherry. On the palate there are flavors of cherry, black raspberry and blueberry. The finish is exceptionally smooth.

Frescobaldi Nipozzano Chianti Rufina Riserva is a red wine produced by Marchesi de' Frescobaldi winery located in Tuscany, Italy. The wine is made using a blend of Sangiovese, Malvasia Nera, and Colorino grapes, which are grown in the vineyards surrounding the winery. The wine is fermented in stainless steel tanks and aged in French oak barrels for 24 months, followed by bottle aging for an additional 3 months. On the nose, the wine exhibits aromas of black cherry, ripe plum, and a hint of spice. On the palate, the wine is full-bodied, with firm tannins and a good balance of acidity. Flavors of dark fruit, leather, and a hint of tobacco are present. This wine is a great pairing with roasted meats, pasta dishes, and aged cheeses.

Righetti’s Amarone is produced from selected Corvina (70%), Rondinella (20%) and other indigenous varietals (10%) grown in the hills of the Valpolicella Classico DOC. The finest bunches of ripe grapes are placed in shallow wood crates and left to dry over a period of 3-5 months. Thereafter, the grapes are pressed, the juice is fermented to dryness, and the wine is aged in large casks of Slavonian oak.
Full-bodied and rich with aromas of dried fruit, plums, black cherry and a distinct “earthy” note. The wine will continue to evolve in the bottle over the next 5 to 10 years. What remains is a highly extracted fruit-driven wine that presents with 15.2% Alc.

 Taylor's wines are lovely across the spectrum including this 10-Year-Old. Light ruby/tawny colour. Spicy, with lots of walnutt-y and caramel notes, exotic spices and tobacco. Fruit comes to the fore on palate, red berries perhaps, but the mellow barrel-aged warmth re-emerges into a long finish with a little bolstering tannin and good acidity. Pair with a baked fig pudding or chunk of mature cheddar.

This Champagne Lombard Premier Cru Blanc de Noirs Extra Brut is made from 100% Pinot Noir grapes, sourced from top vineyards in Champagne. It offers a pale yellow color with delicate bubbles and a complex aroma of ripe fruit, toasted bread, and nuts. On the palate, it is dry, crisp, and refreshing, with flavors of citrus, red berries, and brioche. The wine has a long and elegant finish, with a subtle minerality and a creamy texture. There are observable but minor differences between the wines of the different Climats (named plots). In most cases, Meursault is greeny-gold in colour or canary yellow, leaning towards bronze as it ages. Limpid and brilliant, it sometimes exhibits silvery highlights. Its bouquet has strong aromas of ripe grapes. The young wine is redolent of toasted almonds and hazelnuts in a floral (mayflower, elder, bracken, lime, verbena) and mineral (flint) setting. Butter, honey, and citrus fruits are also present. On the palate it is rich and fat with a cheerful and appealing taste of hazelnut. Unctuousness and freshness are in silky balance. Long and structured, it needs time to mature - this is a great white wine for laying down.

Padre Azul Reposado is matured in hand-selected oak bourbon barrels for at least eight months. The oak influence gives this premium tequila a particular complexity that unfolds on the palate, especially when enjoyed neat.
