This unique eau-de-vie is made from distilled cider from grapes grown on the estate at Domaine Johanna Cecillon. Before distillation, the ciders are aged on the lees in both barrel and tank for more than a year. The blend before distillation is both fruity and tannic ciders. The nose is powerful with spicy apples and pears with a beautiful roundness and freshness onthe palate.

Like many of the more historical wineries of Canada's Okanagan Valley, more attention is being made to "terroir" - the idea that certain plots are better suited for specific grape varieties. Ceretto Dolcetto d'Alba Rossana is a dry, organic red wine from Piedmont, Italy, made from 100% Dolcetto grapes. As a 100% Chardonnay cuvee, this initial release of "Chalky" is entirely from the outstanding 2013 vintage, with vineyard sources one third from the southern slopes of the Montagne de Reims, and two thirds on the Cote de Blancs. After pressing, fermentation takes place in small stainless steel tanks before being aged for seven years in the bottle, disgorged early in 2021 with 6g/L dosage.
