The Auchentoshan 1988 PX Sherry Cask Finish showcases the facility’s renowned triple distillation process, offering a rich yet approachable complexity of flavors. Three Wood has been a cornerstone of Auchentoshan's offerings since its introduction in 2002. This expression undergoes a unique maturation process, initially aged in bourbon barrels before being finished in oloroso and Pedro Ximénez casks. On the nose, it reveals enticing aromas of orange peel, dried apricots, milk chocolate, and freshly sawn oak. The palate is rich and complex, offering notes of toffee, stewed fruits, sherry, cinnamon, and wood spice. Austin Hope grew up working alongside his father, inheriting his love and respect for the region. He led the family’s move into winemaking in 1995, and further exploration of Paso Robles began. In 2000, Austin created his own label, with very small productions of Rhône varietals because of the similarity in terroir. Today, Austin is showcasing an even greater sweep of Paso Robles and expressing a similar richness with a recently released Cabernet Sauvignon. The source of the wine is far-reaching within the appellation - a most discerning group of vineyards located on gently sloping hillsides and hidden pockets across the domain, providing dimension to the Cabernet varietal. The wine has a bold structure of lush, velvety tannins and an unmistakable elegance. It is dark, ripe and well suited to various beef dishes.

INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.

Nose: Fresh and vibrant with notes of green apple, lemon zest, and white flowers.

Taste: Crisp and lively with flavors of citrus fruits, pear, and a hint of brioche.

Palate: Well-balanced and elegant, with a creamy texture and a long, refreshing finish.

Rosé Majeur embodies the refinement of AYALA champagnes. Chardonnay, the emblematic grape variety of the House, for the most part, brings freshness and finesse to this blended rosé, composed of 24 exceptional crus.

When it comes to blending and vinification, nothing is left to chance. The Pinot Noirs, originating from the best crus on the Montagne de Reims, are handled here with an emphasis on fruit rather than structure.

Rosé Majeur is primarily a sweet treat, with a subtle dosage. The delicate notes arise from the red wine, added to the blend in a small amount. This still wine is elaborated exclusively from the Pinot Noir of Aÿ, a Grand cru characterized by the legendary generosity of its fruit.

Ideally suited to accompany a meal, Rosé Majeur will perfectly complement a salmon fillet lightly cooked on one side, pink lamb chops or even a red fruit tart.

A firm, fine-grained red with plum, mahogany, iron and bark on the nose and palate. It's full-bodied with a dusty texture from the tannins. Flavorful finish. Needs time to soften, but a beautiful young Barolo.

A fleshy cuirassier with notes of licorice, spices, and dark fruits. Cherry, currant, and blueberry blend harmoniously, creating a velvety and sweetly ripe taste with splendidly integrated tannins. San Rocco exudes great power and austerity, with an incredible aging potential. A pure complexity and strong character, this wine is monumental.

Francesco Valentini and his son are the only humans allowed in the cellar as Francesco never wants to introduce foreign microbes or yeasts to interfere with the ageing of the wine. These are some of the most ageable white wines in the world and in fact, could be considered “unicorns” as they are hard to find here in Canada.  Truly collectible.

Francesco Paolo Valentini is a more than well-known figure in the wine world. The winery covers 65 hectares of vineyards dedicated to the production of Trebbiano, Montepulciano and Cerasuolo d' Abruzzo. Annual production is around 50,000 bottles. It is not possible to identify the production method as Organic or Biodynamic since the approach in the vineyard is unique and artisanal. Montepulciano is a powerful and impetuous wine. It is characteristic of bewitching with its important body and intriguing bouqet of aromas.

100% agave reposado tequila, a unique product of the Corralejo family obtained from the triple distillation of fermented blue agave musts from Weber’s blue agave, making it an incredible purity and excellent quality product.
Colour: Straw yellow with golden hues. Aromas: It evokes soft and sweet aromas with balanced notes of cooked agave and fruity tones. Finish: Smooth and fresh with fruity notes.

BACARDÍ Reserva Ocho is a complex golden rum with a deep, layered and mellow flavour of dried fruits, spices and oaky vanilla.

BACARDÍ White Rum is a light and aromatically balanced rum. Subtle notes of almonds and lime are complemented by hints of vanilla. The finish is dry, crisp, and clean.

A appealing shimmering straw-yellow colour, Fermata 125 Etna Bianco DOC seduces with incisive, citrus-edged scents of orange and acacia blossom. Beautifully-balanced in the mouth, its multi-layered fruit progresses to a long-lingering finish with a pungent note of balsam.

Fermata 125 Etna Rosso DOC greets the eye with an attractive pale ruby colour, then pleases with delicate scents of red berry, such as wild strawberry, and warm, enfolding spice notes. The palate is built upon tangy, rich fruit, fine-grained, glossy tannins, and a lengthy finish.

Frappato is a light coloured red grape produced all over Sicily, but mainly in the southeast corner. It is typically blended with Nero d'Avola to help soften the tannins (like in Cerasuolo di Vittorio). By itself though, it bursts with aromas of sweet red berries and incense spice. Light in alcohol, but with beautiful texture and acidity, it's a juicy, lively alternative to white wines of the patio for summer. Serve chilled!
