Three Wood has been a cornerstone of Auchentoshan's offerings since its introduction in 2002. This expression undergoes a unique maturation process, initially aged in bourbon barrels before being finished in oloroso and Pedro Ximénez casks. On the nose, it reveals enticing aromas of orange peel, dried apricots, milk chocolate, and freshly sawn oak. The palate is rich and complex, offering notes of toffee, stewed fruits, sherry, cinnamon, and wood spice. The finish is remarkably long, with lingering flavors of malt, oak, and dark chocolate, leaving a satisfying and memorable impression on the palate.

Austin Hope grew up working alongside his father, inheriting his love and respect for the region. He led the family’s move into winemaking in 1995, and further exploration of Paso Robles began. In 2000, Austin created his own label, with very small productions of Rhône varietals because of the similarity in terroir. Today, Austin is showcasing an even greater sweep of Paso Robles and expressing a similar richness with a recently released Cabernet Sauvignon. The source of the wine is far-reaching within the appellation - a most discerning group of vineyards located on gently sloping hillsides and hidden pockets across the domain, providing dimension to the Cabernet varietal. The wine has a bold structure of lush, velvety tannins and an unmistakable elegance. It is dark, ripe and well suited to various beef dishes.

INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.

Avión Reserva Cristalino is an ultra-premium, crystal-clear Añejo tequila blended with a touch of Extra Añejo, produced in Jalisco, Mexico. It is crafted from hand-selected high-elevation agave, aged in American oak barrels, and double-charcoal filtered to remove color while maintaining a silky, complex profile. It features flavors of caramel, vanilla, and roasted agave with a smooth, lingering finish.

Avondale Jonty's Ducks Pekin White is an organic, biodynamic, and vegan-friendly South African white wine blend from Paarl, typically featuring Chenin Blanc with Roussanne, Sémillon, and Viognier. It offers a fresh, aromatic profile of peach, apricot, citrus, and honey, often with a mineral, creamy texture, making it ideal for pairing with poultry or seafood.

Rosé Majeur embodies the refinement of AYALA champagnes. Chardonnay, the emblematic grape variety of the House, for the most part, brings freshness and finesse to this blended rosé, composed of 24 exceptional crus.

When it comes to blending and vinification, nothing is left to chance. The Pinot Noirs, originating from the best crus on the Montagne de Reims, are handled here with an emphasis on fruit rather than structure.

Rosé Majeur is primarily a sweet treat, with a subtle dosage. The delicate notes arise from the red wine, added to the blend in a small amount. This still wine is elaborated exclusively from the Pinot Noir of Aÿ, a Grand cru characterized by the legendary generosity of its fruit.

Ideally suited to accompany a meal, Rosé Majeur will perfectly complement a salmon fillet lightly cooked on one side, pink lamb chops or even a red fruit tart.

100% agave reposado tequila, a unique product of the Corralejo family obtained from the triple distillation of fermented blue agave musts from Weber’s blue agave, making it an incredible purity and excellent quality product.

A appealing shimmering straw-yellow colour, Fermata 125 Etna Bianco DOC seduces with incisive, citrus-edged scents of orange and acacia blossom. Beautifully-balanced in the mouth, its multi-layered fruit progresses to a long-lingering finish with a pungent note of balsam.

Frappato is a light coloured red grape produced all over Sicily, but mainly in the southeast corner. It is typically blended with Nero d'Avola to help soften the tannins (like in Cerasuolo di Vittorio). By itself though, it bursts with aromas of sweet red berries and incense spice. Light in alcohol, but with beautiful texture and acidity, it's a juicy, lively alternative to white wines of the patio for summer. Serve chilled!
