Daishichi Minowamon Junmai Daiginjo (Fukushima) is a premium, award-winning sake crafted using the traditional kimoto method and innovative "super-flat" rice polishing (50% ratio). It features a silky, creamy texture with elegant, refined notes of pear, mango, and melon, balanced by a rich umami backbone, offering a clean, smooth finish. 

Wu Liang Ye (五粮液) is a prestigious Chinese nongxiang (strong aroma) baijiu, known as "Five Grains Liquid." Distilled in Yibin, Sichuan, from sorghum, rice, glutinous rice, wheat, and corn, it is famous for its lasting aroma, mellow, complex taste (notes of pineapple, anise), and smooth, lingering finish.

Cambridge Japanese Gin is a 42% ABV, premium spirit from the Cambridge Distillery, designed to highlight Japanese botanicals through individual, low-temperature vacuum distillation. It features a unique, savory, and fresh profile with key notes of yuzu, shiso leaf, sesame, and sansho pepper, offering a "London meets Tokyo" experience. 

Winemaker Notes "All the different crus are vinified and aged separately with slightly different processes to underline the singular characteristics of each parcel and terroir. Fermentation occurs in stainless steel with daily cap submersion for extraction of flavor and color.Pair with a hearty stew, wild game, roasted red meats, and cheeses."

A sophisticated powdery pink robe with luminous glints of wild rose. Delicate, vivacious bubbles are the result of an ageing period of 36 months. A base of 20% of reserve wines, white and red, gives this rose blend a subtle, yet complex nose. The initial fragrances from the 5-6% of elegant red wines are redolent of homemade strawberry jam mixed with the fruitiness of blood peach. A meticulous selection of crus gives the Charles Heidsieck Rose Reserve the rich warm notes of gingerbread and cinnamon. The deep powerful mouthfeel, the result of ageing in thousand-year-old cellars offers a burst of strawberry, raspberry and blackberry nestled in velvety whipped cream.

Inky dark purple core and hue. Pure and layered nose displaying ripe black currant, plum an aromatic herbal spiciness, tobacco leaf, fine wood and violet notes. Nice density and grip on the palate, ample dark fruit notes of cassis and cherry with good layers of sage, bay leaf, tobacco, liquorice and fine wood. Ample and structured with plenty of grainy tannin and a balancing fresh acidity, powerful yet in an elegant style with a very long and lingering finish.

Bouquet: On the first nose, the wine reveals white flower aromas (honeysuckle, lilac), citrus notes, as well as fresh butter and cream. After airing, as it is getting warmer, this Champagne exhales another spectrum of aromas. The wine reveals spicy notes of ginger, and lemongrass, which were unsuspected until then.

Flavour: The beautiful quality of the acidity (present throughout the tasting) is especially remarkable. The frank vinosity of the wine (roundness and alcohol) gives an impression of strength and freshness. The wine appears both broad yet tight. These various sensations produce a pure, creamy and silky-textured wine. The finish is clean, slightly mineral and long. The last aroma is the grapefruit. The impression will be remembered as a harmonious, healthy and vibrant wine.

The Cogno family has been making wine for four generations in Piedmont. Located in Novello (one of the 11 communes in which Barolo can be made), it is now being run by Elvio's daughter Nadia and her husband Valter Fissore, the current winemaker. Ravera is a powerful Nebbiolo that has enticing scents of rose, tobacco and perfumed berry, along with a palate of violet, raspberry compote, star anise and wild mint. he finish is complex with some spice notes. This wine will no doubt become better with age. 

Xavier Gerard is one of the young stars of the Northern Rhone. His father left him some prime land in the regions of Cote Rotie (including a tiny parcel in La Landonne), Condrieu and Saint Joseph. Although he is not certified, he practises organically in all his vineyards, and all of his wines are unfined and unfiltered. This is a blend of 96% Syrah and 4% Viognier, which makes its presence known with a touch of stone fruit among the ripe forest berries. Good concentration and smooth tannins, yet with high acidity that all lead to a long finish.

Suntory Whisky Ao is a Japanese blended whisky produced by Suntory, one of Japan's most renowned distilleries. "Ao" means "blue" in Japanese and is meant to evoke the image of the pristine waters of Japan. The whisky is made with a combination of malt and grain whiskies, which are carefully selected by Suntory's master blenders and aged in different types of casks, including American oak, Spanish oak, and sherry casks. The result is a smooth and balanced whisky with a delicate aroma of honey, vanilla, and oak, complemented by a sweet and spicy taste with notes of cinnamon, nutmeg, and ginger. Suntory Whisky Ao is a premium whisky that is best enjoyed neat or on the rocks, and its elegant and minimalist bottle design reflects the attention to detail and craftsmanship that goes into its production.

The nosing passes find lightly toasted malt notes along with wood, sawdust, distant mint, and light caramel—not the most expressive Highland Park bouquet. The palate entry highlights the maltiness; at midpalate the taste becomes sweeter and honey like complementing the grain/malt base. Finishes assertively with the spirit underlining the honeyed sweetness.

Chateau Haut Bailly is one of the most loved and most prestigious wine estates in all of Bordeaux. This Cru Classe of Graves has been owned by the Wilmers familiy since 1998, even though it has been in existence since 1530 and passed down the Bailly family line. With the investment made by the Wilmers family, the winery was custom built to a contemporary building, which allows them to carry out precision work in optimal conditions- that was debuted with the 2021 vintage. This 2019 is a red blend of 56% Cabernet Sauvignon, 36% Merlot, 4% Cabernet France and 4% Petit Verdot. The aroma is elegant and complex with blackcurrants, earth, cigar box and pencil shavings with full body, ripe tannins and lively acids. This vintage received scores of 96+ from many critics.

The 2019 La Fleur-Pétrus dares to outshine Trotanoy this year, wafting from the glass with aromas of rich berry fruit, plum preserve, dark chocolate, cigar box and spices. Full-bodied, rich and enveloping, it's broad and layered, with beautifully polished tannins, a ripe core of fruit and a seamless, enveloping profile. This is an elegantly muscular, generous Pomerol whose sumptuous personality reflects the warm, dry vintage. Drink Date 2025 - 2055

Koval was founded in Chicago in 2008 by Dr. Sonat Birnecker Hart and her husband, Dr. Robert Birnecker. The distillery was the first to open in the city since the mid-1800s. The word ‘koval’ means ‘smith’ or ‘blacksmith’ in many Eastern languages, but in Yiddish it also means ‘one who forges ahead’. Koval pays homage to Sonat’s grandfather who decided to “forge ahead” and move to the USA and start a new life from scratch. These products are all made organically and with a “grain to glass” philosophy, the distillery believes in only offering high-quality, well-made spirits using state-of-the-art technology.

The spicy kick that comes from this 100% rye is evident, yet it’s fresh and light with additional sweet nots of maple and candy corn. Smooth and balanced, this is likely one of the best rye whiskies you will ever taste.

Nose: Sweet prunes, dried fruits and raisins; sponge cake with hot chocolate sauce, a hint of coffee and honey aromas. Taste: Sweet liquorice, dark berries, jam and candied fruits, juicy apricots, caramel with roasted coffee beans with some sweet spice. Finish: Sweet sherry notes, dried fruits with a hint of oak.

A pale gold, light-bodied spirit with a brisk feel and hearty alcohol sting. The scent landed somewhere between smoky and menthol, bringing to mind menthol cigarettes. But the flavor was warm and honey-like.

Matured in first-fill sherry and bourbon casks as well as refill casks. Marvelously rustic on the nose, with aromas of dried forest leaves and bramble, lemon, vanilla, peach, and light sherry soapiness. Honeyed texture and flavor on the palate, pleasantly bright with honey, lemon tea, apricot and peach tart, which continues to a smooth and honeyed finish with notes of cinnamon, marmalade, and sliced orange. Delicious, straightforward, and enjoyable.

Kujira 15 Year Old is a premium Japanese single-grain Ryukyu whisky from Masahiro Distillery, crafted from 100% Indica rice and black Koji. Matured for over 15 years in Sherry, Bourbon, and American White Oak casks, this 43% ABV spirit offers a mellow, silky texture with notes of dried plums, chocolate, and oak.

Penderyn Gold Range Portwood is a 46% ABV Welsh single malt whisky matured in bourbon barrels and finished in port casks, offering a rich, creamy, and fruity profile. It features prominent notes of dried fruits, dark chocolate, cranberries, toasty oak, and honey, often described as a, sweet and full-bodied, unpeated whisky.

Patrón Extra Añejo is an ultra-premium, 100% Weber Blue Agave tequila aged for at least 3 years in American, French, and Hungarian oak barrels. Medium to full bodied, extremely light, gentle tannins of very fine grain and a harmonic, balanced finale with a smooth, progressive closure.

The typical flavours of roses and dried cherries is evident in this powerful Nebbiolo and of course these wines will age for decades, into 2040. On the nose, the wine exhibits rich, intense aromas of red fruits, such as cherries and raspberries, alongside hints of licorice, tobacco, and leather. On the palate, it is full-bodied with firm tannins, a great structure, and a long, persistent finish. The wine has a complex flavor profile that includes dark berries, plums, and black pepper, with subtle hints of vanilla and spice. The oak aging process adds a layer of complexity and depth to the wine, while the high acidity gives it a vibrant freshness. This is a well-balanced wine that showcases the elegance and power of the Barolo region. It can be enjoyed now or aged for several years to come.

Casa Raia was purchased in 2006 by Frenchman Pierre Jean Monnoyer who restored the old vineyards and began producing natural wines with three labels, the "supertuscan" Bevilo, a Sangiovese Rose and this Brunello di Montalcino. Made with 100% Sangiovese (as required by law) this ageable beauty is elegant with a nose of cherry, cinnamon, thyme and hints of pencil shavings and earth. Certainly one of the best "natural" wines out there.

Saint Joseph in the Northern Rhone is only authorized for 100% Syrah. Black pepper, warm spice, black cherry, and iron minerality, it would be best to put this away and let the tannins settle down, or open for several hours before serving to open. Classic Rhone Valley Syrah.

With a bold and smoky aroma, this whisky captivates the senses with sweet spice, dried dark fruit, caramel, tar, brine, and toasted nuts. On the palate, it delivers richness, sweetness, and smoothness, unveiling robust flavors of smoky campfire, cumin, molasses, and peat, accompanied by hints of apple crumble and spice.

The nose is élégant and offers power (in finesse/controlled), a beautiful racy grain and a good definition. It reveals notes of boysen berry, fleshy/juicy strawberry, small notes of small wild fruits associated with fine touches of cornflower, pulpy/juicy violet plum as well as fine hints of tobacco, very discreet hints of cuben pepper, tonka bean, caramelized almond and an imperceptible hint of coffee (in the background). The palate is elegante, very finely tight, racy and offers a good definition, complexity, a beautiful silky/delicate touch, a beautiful finesse of the suavity/fat, tension, a racy power (in finesse/controlled) as well as a good guideline and finesse of the tension. On the palate this wine expresses notes of blackberry, cassis, small notes of wild strawberry associated with small touches of small ripe/crushed red berries as well as hints of mild tobacco, tonka bean, mocha, cardamom, a subtle hint of zan, juicy violet plum, discreet hints of coffee, vanilla and an imperceptible almost saline hint (in the background). Tannins are precise, structuring, coating. Good length. Like a square of silk, we perceive thousands of small grains/threads that melt in the mouth.

The watchword for this wine is style. Tannins underline the fruit. This rich structure, while not losing the swaths of berry flavors and crisp black currants, presents the balance between the ripeness and freshness of the vintage. Drink this wine from 2024. Roger Voss

Chateau Gazin is a high quality winery located in the Pomerol AOC on the right bank of Bordeaux, representing five generations of owners and growers. With 23ha of vineyards, the clay-gravel plateau is perfect for merlot and cabernet franc. The 2019 is a blend of 89% merlot, 7% cabernet sauvignon and 4% cabernet franc. A solid Pomerol that has spicy red and black cherry fruit, notes of cedar, violets and plum with a vull-bodied, velvety and textural palate. This will no doubt age incredibly over the long haul!

This first cask-strength expression in Highland Park’s core range was matured predominantly in sherry-seasoned American oak. Honey, bonfire smoke, orange peel, and a suggestion of treacle on the nose. Sweet and smoky on the palate, with toffee and orchard fruits turning more citric in time. The finish yields sweet spices, more honey, dark chocolate, black pepper, and bonfire embers.
