The Macallan distillery of Speyside was founded in 1824 by Alexander Reid, a barley farmer. It was one of the first distilleries in Scotland to be legally licensed. Made from the finest barley and matured for 15 years in a combination of Sherry seasoned American and European oak; these casks without a doubt, are the single greatest contributor to the distinctive aromas and flavours, not to mention the outstanding quality of this Scotch. The apple takes centre stage in the 15, showing baked apples with butterscotch, marmalade and notes of toffee on the nose with a warm palate of warm apples with raisins with cinnamon, nutmeg and vanilla. The finish lingers with oak and spice.

HENDRICK’S GIN is created via an absurdly inefficient, yet quite glorious process. In essence, to make one gin, we first create two. One on an old-fashioned pot still, yielding a rich and intricate spirit. The other on a long-necked Carter Head, producing a delicate, more refined spirit. Each still is infused with an unusual symphony of 11 botanicals: chamomile, elderflower, juniper, lemon peel, orange peel, caraway, coriander, cubeb berries, angelica root, yarrow root and orris root. The 1er Cru vineyard "Montmains" is one of the very best 1er Crus in the Chablis . The Chablis Montmains of Chanson Père et Fils has a bright golden yellow color. From the storage in oak barrels it has a tender vanilla smell, plus white fruits and lemon zest. Firm on the palate, but also with juicy fruit. Invigorating vitality in the long finale.

INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.

This Grangestone Single Malt has been matured in traditional American oak casks until it has achieved the perfect balance of flavours, green leafy notes play in harmony with its sweet delicate oak flavour. The whisky is then transferred into casks that have previously held Sherry to allow for further development.

Aroma: A rich malty aroma with subtle notes of dried fruits and cinnamon sticks. The sherry cask influence has introduced a sherbet spice and oaky character.

Taste: Rick and spicy with layers of sweet oak, raisins, apricots and fresh oak. Addition of a little water releases the characteristic flavours of sherry cask.

Finish: Mellow and enduring

Frappato is a light coloured red grape produced all over Sicily, but mainly in the southeast corner. It is typically blended with Nero d'Avola to help soften the tannins (like in Cerasuolo di Vittorio). By itself though, it bursts with aromas of sweet red berries and incense spice. Light in alcohol, but with beautiful texture and acidity, it's a juicy, lively alternative to white wines of the patio for summer. Serve chilled!

Through 26 generations (since 1385!), the Antinori family has forged a passionate bond with their fans. This blend of Sangiovese, Cabernet, Merlot and Syrah is rich and succulent, with violet floral notes, vividly expressed black and red berry fruit, tobacco, and oak spice. Pair it with roasted meats.
