Kujira Inari is a 46% ABV Japanese single grain whisky from Okinawa’s Masahiro Shuzo, crafted from 100% Indica rice and black Koji. Aged in virgin white oak, sherry, and bourbon casks, it features a deep amber color with a flavor profile of tropical fruits, delicate oak, butterscotch, and nuts.

Gahoujin Junmai Dai-Ginjo (我逢人) is a premium, award-winning Japanese sake from Nakano Sake Brewery, crafted with Yamadanishiki rice polished to 30%. It features a fruity aroma (melon, apple, peach) with a creamy, rich texture, a subtle sweetness, and a clean, refreshing finish.

Tenzan Shichida Junmai Daiginjo is a premium, non-charcoal filtered (muroka) sake from Saga, Japan, renowned for its elegant aroma, robust umami-driven flavor, and silky texture. Crafted with Yamada Nishiki rice polished to 45%, it features notes of white flowers, peach, and melon with a refined acidity and a long,, clean, dry finish.

Craigellachie 17 Year Old is a robust, non-chill filtered Speyside single malt (46% ABV) known for its distinctive, slightly sulfury "meaty" character balanced with sweet, tropical fruit notes. Matured in a blend of 50% first-fill bourbon and 50% first-fill sherry casks, it offers a creamy, complex flavor profile featuring notes of pineapple, vanilla, licorice, and roasted nuts.

Talisker Distillers Edition is a 45.8% ABV Isle of Skye single malt, double-matured in Amoroso-seasoned American oak casks for enhanced richness. It blends signature maritime peat, smoke, and black pepper with deep, sweet sherry notes, including dried fruits, vanilla, and cocoa, offering a more complex, rounded, and sweeter profile than the standard 10-year.

The Dalmore 12 Year Old Sherry Cask Select is an elegant Highland Single Malt (43% ABV) that is matured in American white oak ex-bourbon casks before being finished in a special blend of aged Oloroso and Pedro Ximénez sherry casks. It features notes of caramelised orange, ginger, sultanas, dark chocolate, and cinnamon.

Penderyn Gold Range Portwood is a 46% ABV Welsh single malt whisky matured in bourbon barrels and finished in port casks, offering a rich, creamy, and fruity profile. It features prominent notes of dried fruits, dark chocolate, cranberries, toasty oak, and honey, often described as a, sweet and full-bodied, unpeated whisky.

Cambridge Japanese Gin is a 42% ABV, premium spirit from the Cambridge Distillery, designed to highlight Japanese botanicals through individual, low-temperature vacuum distillation. It features a unique, savory, and fresh profile with key notes of yuzu, shiso leaf, sesame, and sansho pepper, offering a "London meets Tokyo" experience. 

Padre Azul Silver is a premium 100% Blue Weber agave tequila from Jalisco, Mexico, bottled immediately after distillation for a clear, crisp, and authentic flavor. It is known for a smooth, velvety palate with notes of cooked agave, vanilla, coconut, and citrus. It is an ideal, high-quality choice for sipping or mixing in premium cocktails.

The family owns 18 hectares between La Morra, Serralunga d'Alba, Monforte d'Alba, including 4 Barolo Cru's: R56 (Brandini), Annunziata, Meriame and Cerretta. Langhe Nebbiolo is the finest and most elegant bottled expression of this grape variety. An intense and subtle color at the same time, anticipates a structure and tannin that are typical of Nebbiolo. The land of La Morra, with its sandy percentage, reveals the more feminine nuance of this wine, giving a silky tannin and a good persistence in the mouth. If Barolo is too expensive, try a Langhe Nebbiolo.

Château Vartely Taraboste Cabernet Sauvignon - Merlot (Rezerva) is a premium, full-bodied Moldovan red wine with 14.5% alcohol, featuring intense aromas of ripe pomegranate, blackcurrant, dried plums, and oriental spices. Aged for 18–23 months in new oak, it offers a velvety, structured taste with soft tannins, high maturation potential, and a "Purely Aristocratic" style. 

Good Day Soju by Muhak (est. 1929) offers an exceptionally clean and fresh flavour born from its famously pristine water from Masan - a region renown for its water quality since the Goryeo dynasty. Good Day's smoothness comes from a ten-step filtration and 72-hour oxygenation and maturation steps.

Rich ruby red. Spicy, vivid and inviting nose of rich cassis fruit and ripe cherry with Mediterranean herbs in the background. Pithy and juicy on the palate, mouth-filling with clear fruit and long, precise finish.

Les Griffons de Pichon Baron 2018 reveals a deep, almost black colour. The nose is delicate, with notes of black fruits and a hint of subtle, well-integrated wood. The palate is generous and full, with powerful and luscious tannins. The balance is rich and harmonious with tension.

Named for the Norman princess who lived around Cirò in the 11th century, the Mabilia is made from 100% Gaglioppo grapes. The juice is left on the skins for 24 hours, with only a delicate pink colour extracted, and the resulting wine being very fruity with notes of watermelon, red cherry, and roses. Fresh, lively, and fruity, this rosato is a great match for chicken, turkey and fish dishes.

The 2020 Echo de Lynch-Bages is a blend of 60% Cabernet Sauvignon and 40% Merlot, aging for around 12 months in one year-old French oak barriques. It has an alcohol of 13.03%, a pH of 3.78 and an IPT (tannin index) of 80. Deep garnet-purple in colour, it rolls out of the glass with expressive, upfront notes of baked black and red cherries, plum preserves and blackcurrant cordial, followed by hints of new leather, tobacco leaf and a medicinal waft. The medium-bodied palate is chock-full of savoury flavours, with a chewy texture and just enough freshness, finishing a little rustic.

Made from 100% Furmint, the Château Pajzos "T" displays a pale golden color with a gorgeous aromas of apricots, grapefruit, volcanic soils and nuts. The palate is awash with fresh citrus notes of clementine and lime, intermingle with stone fruit flavors and a slightly smokey minerality. The wine is light and crisp with a wonderful tension of taut acidity, giving it a beautiful backbone to which all those flavors can cling. An excellent choice with grilled poultry, fish or cheese dishes, especially grilled cheese with salami.

Glen Garioch (prounouced 'Geery') is one of the oldest operating distilleries in Scotland, located in the quaint and historic town of Oldmeldrum, near Aberdeen, the most easterly located. They've been distilling since 1797, but 200 years in 1997, they re-opened after being closed for two years and started the Renaissance line. This 18-year-old is the 4th and final chapter in the lineup, understanding the character of an 18 year old. Matured for 18 years in both bourbon and sherry barrels, this light golden amber Scotch has a nose of honey, toffee, vanilla and some white chocolate. The taste is big and bold with oaky spices, pepper and cinnamon and a long, smooth finish.

Xavier Gerard is one of the young stars of the Northern Rhone. His father left him some prime land in the regions of Cote Rotie (including a tiny parcel in La Landonne), Condrieu and Saint Joseph. Although he is not certified, he practises organically in all his vineyards, and all of his wines are unfined and unfiltered. This is a blend of 96% Syrah and 4% Viognier, which makes its presence known with a touch of stone fruit among the ripe forest berries. Good concentration and smooth tannins, yet with high acidity that all lead to a long finish.

Philippe and Valerie Bassereau (4th generation) have been managing the Chateau de la Graves estate since 1990 in one of the more unknown appellations of Bordeaux: Cotes de Bourg (on the right bank opposite of Margaux). This rose is made from 100% Merlot with elegant notes of white flowers, white peach, white raspberry and cherry. It is so drinkable and perfect to share with friends on the patio. Delightful!

Jeff Carrell makes wine in Languedoc, Bordeaux, Burgundy and Beaujolais. This Pinot hails from Languedoc and has a round, fresh mouth with cherry, strawberry and flint notes along with a spicy, wet stone with nuances of earth on the palate. Koval was founded in Chicago in 2008 by Dr. Sonat Birnecker Hart and her husband, Dr. Robert Birnecker. The distillery was the first to open in the city since the mid-1800s. The word ‘koval’ means ‘smith’ or ‘blacksmith’ in many Eastern languages, but in Yiddish it also means ‘one who forges ahead’. Koval pays homage to Sonat’s grandfather who decided to “forge ahead” and move to the USA and start a new life from scratch. These products are all made organically and with a “grain to glass” philosophy, the distillery believes in only offering high-quality, well-made spirits using state-of-the-art technology.

The spicy kick that comes from this 100% rye is evident, yet it’s fresh and light with additional sweet nots of maple and candy corn. Smooth and balanced, this is likely one of the best rye whiskies you will ever taste.

Mastroberardino Lacryma Christi del Vesuvio is a renowned, historic DOC wine from Campania, Italy, sourced from volcanic soil on Mount Vesuvius. It is usually 100% Coda di Volpe, featuring citrus and white peach with high acidity.

The true home of Fiano is Campania, but it grows in the heel of Italy's boot (Puglia) very well also. Rivera makes wines that capture the exuberance that is Puglia. This example is highly aromatic with white flowers, yellow fruits and smoky notes and a multi-layered palate with an acidity that balances all components.

Lucien Lardy is a family owned property with vineyards in the Fleurie and Moulin-A-Vent crus of Beaujolais. The fruit for this Villages wine was selected from a Fleurie vineyard that is over 50 years old. Perfect with Asian food, this Gamay is bright with bursts of wild cherry. Serve slightly chilled for the best experience!

Exclusive to CLS, we don't often see Nebbiolo done in rose form, but the brother and sister team at Antoniolo of Lorella (whom this wine is named after)and Alberto have created this gorgeous rosato that is intense and fragrant with juicy red raspberries and violets. Initial mouth feel is soft but the acidity is high with a subtle spicy kick. Slight tannins and medium alcohol all rolled into a perfectly balanced wine. Only 50 more bottles left in the province, and they are here at CLS, so be sure to get your hands on one (or three, or...)

Deep garnet in color with rich raspberry, fig, exotic clove spice, and notes of fresh mint. Layered briary fruit on the palate with cocoa and a slight crushed granite minerality. Supple tannins and a long, lingering finish. MB (2/22)

Overall, this wine offers a fruit-forward character that is typical of the 2018 vintage, making it the boldest selection in this lineup.
