The Bushmills Causeway Collection, inspired by the iconic Giant's Causeway, showcases the rich heritage of the North-Irish distillery. This 10-year-old single malt, triple distilled for smoothness, undergoes a meticulous maturation process. Initially aged in a blend of Oloroso Sherry and Bourbon casks for 7.5 years, it then undergoes a unique finishing period in rare Cognac casks for an additional 2.5 years. The whisky is bottled without filtering or artificial coloring, preserving its natural character and complexity. With limited availability, each bottle represents a truly special expression of Bushmills craftsmanship.

Finished in Lustau oloroso sherry butts, look for an amber hue and a rich aroma that suggests dried figs and dates. The palate benefits from a splash of water, which coaxes cocoa and prune notes, winding into a warming finish with cinnamon and clove heat.

Matured in first-fill sherry and bourbon casks as well as refill casks. Marvelously rustic on the nose, with aromas of dried forest leaves and bramble, lemon, vanilla, peach, and light sherry soapiness. Honeyed texture and flavor on the palate, pleasantly bright with honey, lemon tea, apricot and peach tart, which continues to a smooth and honeyed finish with notes of cinnamon, marmalade, and sliced orange. Octomore 14.3 showcases the essence of Islay barley, sourced just a stone's throw from the distillery on Octomore farm, emphasizing the significance of the raw ingredient and the revival of the local farming community. Adam Hannett, the Head Distiller, skillfully extracts the essence of the Islay barley, resulting in a cereal-forward single malt whisky. Aged in a blend of first-fill ex-American whiskey casks and second-fill wine casks, the oak influence harmonizes with the grain, allowing the terroir and distinctive flavor of the Islay barley to shine through. The nose offers enticing aromas of hot, sweet mash and earthy peat smoke, accompanied by soft biscuit notes from the malted barley. The palate reveals creamy porridge and cereal nuances, balanced by hints of butterscotch, honeycomb, and a touch of vanilla, while the smoky essence lingers on the finish.

Honey, vanilla, peppercorn, Golden Delicious apples, macadamia nut, green banana, and clove-spiked orange. The flavors are bright with green apple, banana, vanilla, and citrus, developing a delicious creaminess to support the pot still spices. The creaminess really crowns this older whiskey as something special, with the bourbon wood playing a greater role than in younger, jammier Redbreasts. The finish is wonderfully long and warming, with spice, tangy orange, and oak.

The nose of this wine is reticent at first but with a decant or time in the glass, elegant aromas of ripe red berries and blue fruits begin to shine through. Hints of clove, cinnamon and savory herbs complement the fruit on the nose. The palate is bright and fresh, with a pop of acidity that keeps the wine from being overpowering. Flavors of Bing cherry, fig and cooked plum shine but do not steal the show, finishing with a savory note. This wine will go great with braised or grilled meats and/or earthy vegetables.

Wayne Gretzky No. 99 Distillery Canadian Cream Liquor is a 17% ABV, Ontario-made, award-winning spirit blending No. 99 Red Cask Whisky with fresh local cream. It features a, smooth, tan-colored profile with rich notes of almond, cream, dark biscuit, and nutmeg. It is best served chilled, on ice, or in coffee.

Daishichi Minowamon Junmai Daiginjo (Fukushima) is a premium, award-winning sake crafted using the traditional kimoto method and innovative "super-flat" rice polishing (50% ratio). It features a silky, creamy texture with elegant, refined notes of pear, mango, and melon, balanced by a rich umami backbone, offering a clean, smooth finish. 

Tenzan Shichida Junmai Daiginjo is a premium, non-charcoal filtered (muroka) sake from Saga, Japan, renowned for its elegant aroma, robust umami-driven flavor, and silky texture. Crafted with Yamada Nishiki rice polished to 45%, it features notes of white flowers, peach, and melon with a refined acidity and a long,, clean, dry finish.

Dream Blue M6+ (Meng Zhi Lan) is a premium Chinese Baijiu, upgraded from the classic M6 with enhanced, richer, and mellower flavors. Fermented for 180 days and aged for 15 years, it features a 550ml bottle design in deep blue and champagne gold. Known for a smooth, thick texture and fragrant, floral aroma, it is a high-end spirit.

Clément Cuvée Homère is a premium, aged rhum agricole from Martinique, created as an homage to founder Homère Clément. A "Hors d'Age" blend, it combines rums aged for 6 to 15+ years in oak barrels, offering a complex, velvety profile of dark mahogany color with notes of toasted caramel, candied orange, dried fruits, and tobacco.

Penderyn Gold Range Portwood is a 46% ABV Welsh single malt whisky matured in bourbon barrels and finished in port casks, offering a rich, creamy, and fruity profile. It features prominent notes of dried fruits, dark chocolate, cranberries, toasty oak, and honey, often described as a, sweet and full-bodied, unpeated whisky.

The family owns 18 hectares between La Morra, Serralunga d'Alba, Monforte d'Alba, including 4 Barolo Cru's: R56 (Brandini), Annunziata, Meriame and Cerretta. Langhe Nebbiolo is the finest and most elegant bottled expression of this grape variety. An intense and subtle color at the same time, anticipates a structure and tannin that are typical of Nebbiolo. The land of La Morra, with its sandy percentage, reveals the more feminine nuance of this wine, giving a silky tannin and a good persistence in the mouth. A barrel-aged fruited sour ale that tastes exactly like it should: A Barrel of Apricots! Full-bodied yet fresh with a nose of both ripe and dried apricots, with the brettanomyces yeast adding spice and sour nuances and those malty cereal notes detected underneath.
Best served before the Year Of The Rooster, 2053. Can be cellared at room temperature.

Good Day Soju by Muhak (est. 1929) offers an exceptionally clean and fresh flavour born from its famously pristine water from Masan - a region renown for its water quality since the Goryeo dynasty. Good Day's smoothness comes from a ten-step filtration and 72-hour oxygenation and maturation steps.

Named for the Norman princess who lived around Cirò in the 11th century, the Mabilia is made from 100% Gaglioppo grapes. The juice is left on the skins for 24 hours, with only a delicate pink colour extracted, and the resulting wine being very fruity with notes of watermelon, red cherry, and roses. Fresh, lively, and fruity, this rosato is a great match for chicken, turkey and fish dishes.

The 2020 Echo de Lynch-Bages is a blend of 60% Cabernet Sauvignon and 40% Merlot, aging for around 12 months in one year-old French oak barriques. It has an alcohol of 13.03%, a pH of 3.78 and an IPT (tannin index) of 80. Deep garnet-purple in colour, it rolls out of the glass with expressive, upfront notes of baked black and red cherries, plum preserves and blackcurrant cordial, followed by hints of new leather, tobacco leaf and a medicinal waft. The medium-bodied palate is chock-full of savoury flavours, with a chewy texture and just enough freshness, finishing a little rustic.

Made from 100% Furmint, the Château Pajzos "T" displays a pale golden color with a gorgeous aromas of apricots, grapefruit, volcanic soils and nuts. The palate is awash with fresh citrus notes of clementine and lime, intermingle with stone fruit flavors and a slightly smokey minerality. The wine is light and crisp with a wonderful tension of taut acidity, giving it a beautiful backbone to which all those flavors can cling. An excellent choice with grilled poultry, fish or cheese dishes, especially grilled cheese with salami.

Glen Garioch (prounouced 'Geery') is one of the oldest operating distilleries in Scotland, located in the quaint and historic town of Oldmeldrum, near Aberdeen, the most easterly located. They've been distilling since 1797, but 200 years in 1997, they re-opened after being closed for two years and started the Renaissance line. This 18-year-old is the 4th and final chapter in the lineup, understanding the character of an 18 year old. Matured for 18 years in both bourbon and sherry barrels, this light golden amber Scotch has a nose of honey, toffee, vanilla and some white chocolate. The taste is big and bold with oaky spices, pepper and cinnamon and a long, smooth finish.

Xavier Gerard is one of the young stars of the Northern Rhone. His father left him some prime land in the regions of Cote Rotie (including a tiny parcel in La Landonne), Condrieu and Saint Joseph. Although he is not certified, he practises organically in all his vineyards, and all of his wines are unfined and unfiltered. This is a blend of 96% Syrah and 4% Viognier, which makes its presence known with a touch of stone fruit among the ripe forest berries. Good concentration and smooth tannins, yet with high acidity that all lead to a long finish.

Philippe and Valerie Bassereau (4th generation) have been managing the Chateau de la Graves estate since 1990 in one of the more unknown appellations of Bordeaux: Cotes de Bourg (on the right bank opposite of Margaux). This rose is made from 100% Merlot with elegant notes of white flowers, white peach, white raspberry and cherry. It is so drinkable and perfect to share with friends on the patio. Delightful!

Jeff Carrell makes wine in Languedoc, Bordeaux, Burgundy and Beaujolais. This Pinot hails from Languedoc and has a round, fresh mouth with cherry, strawberry and flint notes along with a spicy, wet stone with nuances of earth on the palate. Its robe is soft, with discreet copper glints and lively fine bubbles. The bouquet is rich and intense in cauldron-cooked small red and black fruits, biscuits and pastry aromas. A very lovely attack on the palate which subsequently reveals its suppleness, fruitiness and vivacity in terms of fine and full-bodied tannins. This is a tender and structured cuvee.

The Rosé Dolorès is best enjoyed as a fresh and light aperitif on a beautiful sunny day. It is also perfect for sweet dishes such as seasonal red fruit tarts with lemon zests, or a red fruit salad with mint served with a generous slice of a flaky brioche. A touch of elegance that is pleasing to everyone.

Koval was founded in Chicago in 2008 by Dr. Sonat Birnecker Hart and her husband, Dr. Robert Birnecker. The distillery was the first to open in the city since the mid-1800s. The word ‘koval’ means ‘smith’ or ‘blacksmith’ in many Eastern languages, but in Yiddish it also means ‘one who forges ahead’. Koval pays homage to Sonat’s grandfather who decided to “forge ahead” and move to the USA and start a new life from scratch. These products are all made organically and with a “grain to glass” philosophy, the distillery believes in only offering high-quality, well-made spirits using state-of-the-art technology.

The spicy kick that comes from this 100% rye is evident, yet it’s fresh and light with additional sweet nots of maple and candy corn. Smooth and balanced, this is likely one of the best rye whiskies you will ever taste.
