Basil Hayden's is a Kentucky straight bourbon known for its lighter, spicier, and more approachable profile compared to other bourbons. It's a small-batch bourbon, artfully aged at 80 proof, with a golden amber color. GEORGIAN VALLEYS KHVANCHKARA is a semi-sweet red wine from Georgia, specifically from the Khvanchkara appellation in the Racha region. It's known for its deep ruby color and a velvety, balanced sweetness, with ripe fruit tones and a captivating aroma. The wine is made from a blend of two indigenous Georgian grape varieties, Aleksandreuli and Mujuretuli.

Nelson Bros Classic Bourbon Whiskey is described as having a complex and flavorful profile with notes of spice cake, cherry, milk chocolate, vanilla, and baked apple on the nose. This expression is reputed to contain some whisky up to 40 years old and was matured in a mix of bourbon and sherry casks. The nose offers overt sherry influences, with fruit malt loaf, maple syrup, honey, and old leather. Full and slightly oily on the rich palate, with toffee, raisins, Brazil nuts, and fresh cake mix. Dusty spices and oak in the relatively dry finish.

This spirit features smoky tones with a pleasant permanence in the mouth, slight minerality, and hints of aromatic field flowers. Made from Cupreata and Manso Sahuayo agave species aged 6-8 years, it hails from El Limon and La Calzonuda. The agave is cooked in a conical volcanic stone oven, crushed with a roller mill, fermented in oak wood tubs embedded in the ground, and distilled using a Philippine still with a wooden cap and copper pot.

Cascahuín Blanco tequila is crafted from carefully selected blue weber tequilana agaves sourced from the valleys area, reflecting the distinct characteristics of the region. The production process begins with the use of a masonry oven for cooking the agaves, followed by the extraction of juices through mills, where water from the own well is incorporated. During fermentation, natural yeasts from the yeast pie are utilized in both masonry and stainless steel fermenters. For distillation, a double distillation process is conducted, first in a stainless steel alembic with a copper coil, followed by a second distillation in a small 350-liter copper still with a copper coil. The tequila then undergoes maturation in spent American oak barrels, previously used for tequila for over 20 years, with a resting period lasting from 6 to 8 months in the barrels.

This clear and light-bodied mezcal has a faintly smoky aroma and a mildly peppery flavor. A potent, alcoholic finish fades into black pepper.

This whisky is an ex-Bourbon cask finish and is bottled at 46% abv, and is the first time Penderyn have released a core range single malt using mainly spirit from the pot stills, which we introduced in 2014.

Tasting Notes

Nose: Elegant and floral with light oak notes, vanilla, raisins, toffee apples, citrus peel and a hint of lime.

Palate: A delicate smooth single malt with honeyed fruits, vanilla, cinnamon spice and a hint of nutmeg.

Finish: Soft honey and vanilla notes fade to a malty finish.

Langpai Tequ T8 is a strong-aroma baijiu that is processed old mud pits. Baijiu has a very long fermentation period, from weeks to months or longer. This type of fermentation leads to a spirit very high in esters, hence the very sweet flavors.

Strong Baijiu takes some time to get used to because the flavor profile is quite different. The closest example I know of is Smith & Cross Jamaican Rum. This is a potent very high quality Baijiu full of flavor.
